Four Seasons Resort Hualalai Announces New Restaurant “Miller & Lux” from Chef Tyler Florence

Four Seasons Resort Hualalai, the first and only AAA Five-Diamond and Forbes Five-Star Resort on Hawaii Island, will debut a new restaurant in December in partnership with Chef Tyler Florence. With an intimate club-like ambiance, Miller & Lux Hualalai will offer a refined yet comfortable dining experience, blending his acclaimed American steakhouse with the distinct flavours of the Island of Hawaii. Recognized by the Michelin Guide, the flagship Miller & Lux in San Francisco has been honoured as the “Bay Area's Best Steakhouse.” Miller & Lux Hualalai will feature the best cuts of beef, seafood, and locally sourced produce from the island’s natural bounty. The restaurant will debut just in time for festive season, opening on December 14, 2023 with Chef Florence on-site to welcome the first diners.

Incorporating influence from its local Hawaiian surroundings, Miller & Lux Hualalai will showcase a menu of inventive dishes alongside top selections of fresh game including Miller & Lux’s famous 45 Dry-Aged steaks - Filet Mignon, New York Strip, Wagyu Tomahawk - and fresh local seafood. Guests can also expect several Miller & Lux signature items including the tableside Caesar Salad for two, Kauai Shrimp Cocktail, hand chopped Steak Tartare featuring Big Island Beef, M&L Burger, and more. The award-winning wine list will continue to be available for guests, complemented by the addition of seasonal cocktails from the team at Miller & Lux to pair with each dish.

Exclusive to Miller & Lux Hualalai, Chef Florence is partnering with third-generation Hawaii native blacksmith Neil Kamimura to create a limited number of specialty steak knives for the restaurant forged from high-quality Damascus steel and unique natural elements including petrified wood, bone, and semi-precious stones for the handle. Kamimura is one of the most highly sought-after blacksmiths in the world and now has a multi-year waitlist for one of these knives. Those interested in learning about the trade further can also partake in the Resort’s distinct bladesmith experience with Kamimura, one of the exclusive “Only at Hualalai” offerings available only to Four Seasons Resort Hualalai guests.

As a twenty-seven-year Food Network veteran, Chef Florence has captivated millions of viewers on numerous hit shows, including Emmy nominated Tyler’s Ultimate, and The Great Food Truck Race, entering its 16th season, among many others. His reach and influence extend well beyond his cooking shows, as he has authored 17 cookbooks, including his newest, American Grill: 125 Recipes for Mastering Live Fire, and built an expanding business across multiple platforms.

A two-time James Beard Award nominee for Best Chef West Coast, Chef Florence has launched several highly lauded restaurants, including Miller & Lux at San Francisco’s Chase Center, named the best steakhouse in the Bay Area by San Francisco Magazine, and his original flagship Wayfare Tavern. His most recent openings, Miller & Lux Provisions Patisserie and Rotisserie Cafes in Union Square, and the upcoming Town Hall, are helping to revitalize and enliven downtown San Francisco.
