The amazing morning breakfast selection at ONE FORTY is renowned, with good cause, featuring an astounding array of hot and cold dishes American, Asian and Hawaiian influenced dishes as well as an a la carte menu, for a fresh and delicious start to the day. For many, the idea of all-day breakfast is something to be enjoyed at home, a taste of comfort. But chefs are testing the breakfast boundaries in 2017 and experimenting with new flavour profiles and textures for later in the day.
The Twilight Brunch Mother’s Day menu at the AAA Four Diamond ONE FORTY is a four-course evening experience, beginning with a Bloody Mary amuse - a poached tiger prawn with celery confit, cucumber and tomato gazpacho. The first course delights with a salad bursting with freshness - grilled marinated peaches, burrata, arugula, macadamia nuts, white balsamic reduction and Lanai venison prosciutto. Next up are poached eggs "lomi lomi" served with housed-smoked gravlox, heirloom tomatoes, shaved Maui onions and herb hollandaise on rye bread. The third course features kurobuta "kula" pork served with okinawan sweet potato crepes, braised taro and napa cabbage, charred pineapple and coriander sauce and local mint.
Brittany-born Executive Pastry Chef Sylvain Haage presents a honey and thyme madeleine cake with wild strawberries, mascarpone and balsamic reduction to finish the meal.
Twilight Brunch is offered at USD 145 per person for the meal only, USD 250 per person when accompanied with sommelier-selected wine pairings to complement the brunch offerings.
