Red, White or Green? Diners Ponder Additional Colour When Ordering Wine. Diners at Acqua, the signature restaurant at Four Seasons Hotel Miami, are adding green to the usual choice of red or white when ordering wines.
From the more than 200 labels on offer in the restaurant’s award-winning list, 28 are “green wines” – those produced by using biodynamic, organic or sustainable vinicultural methods.
“Diners are increasingly interested in wineries using sustainable techniques, and we chose to showcase them because they are producing great wines,” says Peter Tischmann, the Hotel’s director of food and beverage.
The “green wines” appear on the list under biodynamic, organically grown and sustainable categories. Biodynamic wines are those that use grapes that are free of all chemical herbicides, pesticides and synthetic fertilisers. In that category, the list includes a Chardonnay and a Fumé Blanc by Napa Valley biodynamic pioneer Grgich Hills and a Riesling by Columbia Valley Wallula Vineyard. It also offers Tempranillos from Spanish producer Telmo Rodriguez and a Meritage by Quintessa.
Organically grown wines are those made from 95% organically grown grapes and have no non-organic ingredients, including sulphites. Acqua’s list includes a Domaines Schlumberger Gewurztraminer and a Gypsy Dancer Oregon Pinot Noir, among others. The sustainable, low-impact category includes wines produced by methods that encourage ecological diversity and prevent environmental degradation by using as little chemicals as possible. The category includes a Stag’s Leap Napa Valley Cabernet Sauvignon, a Duckhorn Napa Valley Sauvignon Blanc and a Dr. Loosen German Riesling.

Acqua is located on the seventh floor lobby of the Hotel and offers a menu of contemporary international cuisine and seafood. The menu is at the vanguard of modern gastronomy, melding international flavours and ingredients with the culinary traditions of South America.
