Zongzi - rice dumplings or sticky rice dumplings - are a traditional Chinese food made of glutinous rice stuffed with different fillings and wrapped in bamboo leaves.  For this year's Dragon Boat Festival, Four Seasons Hotel Shanghai is presenting guests with a special zongzi that is a traditional and popular delicacy from Guangdong Zhaoqing: guo zheng zong (rice dumpling with preserved egg yolk and conpoy) .

Guo zheng zong is rarely seen in Shanghai but it enjoys great fame throughout China. Si Ji Xuan’s Dim Sum Chef Jack Zhang Mingqian is originally from Guangdong, so he decided to introduce zongzi in a different style to Four Seasons guests in Shanghai.

Each guo zheng zong is filled with abundant stuffing including whole conpoy, preserved egg yolk, glutinous rice, mung beans, pork, roast goose and chestnuts. Different from local zongzi, which uses bamboo leaves and is shaped in a triangle, guo zheng zong is wrapped by lotus leaves and created in a flat and square shape.

To make them more tasty, Four Seasons carefully removes the skins of mung beans. Healthy and tasty, this Dragon Boat Festival specialty is all handmade by Si Ji Xuan chefs with no additives, and only limited quantity can be produced every day.
