Four Seasons Resort and Residences Vail to Host Mushroom Seminar and Dinner Event with Expert Larry Evans

Four Seasons Resort and Residences Vail announces that renowned mushroom expert Larry Evans is returning this year to host a lively seminar on the local fungi followed by an extravagant mushroom-inspired reception and dinner.

This exclusive mushroom dinner event with Larry is a spin-off of the Resort’s ever-popular “Mushrooms & Mercedes” series.  To welcome participants, the seminar will focus on local mushroom classification and the diversity of the fungi used in food.  This will follow with a mushroom themed-meal featuring a four course dinner that will make guests rethink how to use mushrooms in their everyday cooking.  The inventive menu includes wild mushroom toast on rye bread crostini; and pan seared Colorado bass with wild mushroom and white bean ragout in a dashi broth.  Mushrooms are not the only focus for Chef Harrison, as he also incorporates the most local and fresh ingredients available in all of his dishes.

Participation in the mushroom seminar and dinner is USD 125.00 per person.  The seminar begins at 3:00 pm followed by the dinner at 6:00 pm in Flame Restaurant’s private dining room, Out of Bounds, on the following dates:
