1. The Story

Our 1920’s Prohibition-era steakhouse is a masterpiece of nostalgic whimsy, with each and every dish having a story. The 34-layer chocolate cake takes its name after the iconic Chicago skyscraper, the tallest building at the time of construction, which had 34-stories. On its creation, Executive Pastry Chef Rasika Mahina explains, “We wanted to create something representative of the concept of the restaurant and where we are. The UAE has a penchant for the dramatic, for monumental skyscrapers like those dotting Al Maryah Island, including ours.”

2. The Chef

Meet the master behind our #FSMasterdish. Chef Rasika Mahina combines his eye-for-detail, with passion and creativity coming from his time spent as a graphic designer to inspire this dessert representative of Butcher & Still’s concept and ethos. One of his great passions is working with chocolate to create breathtaking and decadent sweets. On this he continues, “I especially love working with Valrhona chocolate. They have an exceptional product that offers our guests a truly premium experience. This is something you can taste in all of our signature desserts, but especially the Tribune Tower.”

3. The Flavours

This dessert is the epitome of everything you love in a chocolate cake. It is moist and surprisingly light thanks to its alternating layers of gluten-free flourless sponge and airy mousse. It uses a single-origin 65% semi-sweet Kalingo Valrhona chocolate that balances tart and bitter flavours to offer an unexpected intense freshness. The presentation is also stunning, with a Butcher & Still branded orange peel and signature mini-cleaver.
