“We are always exploring unique ways to present fish and seafood,” Görkem explains. “Each of our dishes pays tribute to a certain star ingredient, combining different preparations so it may be experienced from different angles.” There is often a surprising mix of food items – even pairing sea products with certain cuts of red meat.
Classic Turkish specialties are reinvented with skill, imagination and the highest quality. Manti, the traditional Turkish dumplings, are reborn as Langoustine Manti with Beef Ribs. Monkfish is usually only sautéed in Turkish cuisine, but at AQUA, monkfish is prepared in three different ways – grilled, poached and roasted in garlic stems – and served with seafood sweetbreads and grilled pickled okra, in a dish simply called Monkfish and Sweetbreads. Each item on the menu has its own multi-dimensional concept, and artistic presentation is always paramount.
