Adorn Restaurant at Four Seasons Hotel Chicago Expands Team with New General Manager, Head Sommelier, and Lead Bartender
Adorn Restaurant, the artful New American dining destination located within Four Seasons Hotel Chicago, welcomes newly appointed General Manager Colin Hofer to the team. The 2022 Michelin Guide Chicago Sommelier of the Year brings an intentional, guest-driven perspective to the restaurant’s programming and operations, setting a new bar for contemporary cuisine in Chicago’s Gold Coast neighbourhood. The Adorn team is thrilled to announce the further expansion of its beverage team with the additions of Head Sommelier Owen Huzar and Lead Bartender Joshua “Sarg” Sargeant.

Since 2016, Colin Hofer has honed his industry knowledge and passion for driving service at some of the most recognizable establishments in Chicago. In his first year in Chicago, Colin began as manager of Beacon Tavern before heading to Soho House as the club floor manager. During his time there, Colin managed the experience for high profile guests while driving unique food and beverage offerings to elevate the experience for club members. His interest in the member’s only concepts and its wine program launched his interest for all-things wine and beverage. In 2020, he joined Bonhomme Hospitality Group Porto as general manager of Porto, where he helped the restaurant in achieving its first Michelin star in 2021. In 2022, he was awarded Chicago Sommelier of the Year by Michelin Guide. Most recently, Colin held the role of director of wine and education for all Bonhomme Hospitality Group’s properties, where he drove the beverage programs and quality assurance through his training program. Colin, born and raised in central California, has always loved nature, food and travel. He spent an extended time in Spain before planting roots in Chicago with his wife.
Owen Huzar and Joshua “Sarg” Sargeant
Adorn Restaurant also welcomes Head Sommelier Owen Huzar, and Lead Bartender
Joshua “Sarg” Sargeant, to its growing restaurant and bar teams. Hailing from Boston, Massachusetts, Owen Huzar is the Head Sommelier and wine buyer for Adorn, where he will drive the restaurant and bar’s wine program. After earning his WSET Level 3 Certification, he launched his wine company, Owen’s Open Bottles, LLC, where he distributed wine to restaurants and retail stores in Chicago, did private client sales for Chateau de Pommard in Burgundy, and worked with a Master Sommelier’s bottle shop in the Lincoln Park neighbourhood. Joshua “Sarg” Sargeant is the newly appointed Lead Bartender at Adorn Bar where he oversees the Adorn bar team and cocktail program. Before his role at Adorn, Sarg was a supplier for William Grant and Sons. He will be launching a new cocktail menu at the end of summer 2023, including non-alcoholic pairings for Adorn’s tasting menu.
