Rooted in modern French cuisine, the thoughtfully paced menu reflects Executive Chef Jon Novak’s signature balance of sophistication and ease. Guests can choose between two (USD 38) or three (USD 45) courses, starting with options like Soupe à l’Oignon bubbling with gruyère or Burrata with Fig and Pecan Gastrique served on crisp Pain de Mie toast. Mains lean classic, with thoughtful updates such as Mushroom Risotto with fines herbes, Steelhead Trout with olive and citrus gremolata, or a Garlic-Glazed Chicken Paillard that’s equal parts comfort and confidence. Executive Pastry Chef Eric Snow adds the final act with Peach and Chamomile Crème Brûlée and a decadent 72 percent Araguani Mousse au Chocolat, the kind of desserts that are worth arriving early for.
