Brasserie Margot Brings a Beloved French Tradition to Tuesdays With Poulet & Bubbles

A whole roasted chicken and champagne give a French family meal a new night out

Date night has a new standing reservation at Brasserie Margot at Four Seasons Hotel Atlanta with Poulet & Bubbles, a weekly dinner for two centered around a whole roasted chicken, classic accompaniments and Champagne. Available every Tuesday during dinner service, the new offering takes its cues from the familiar pleasure of a French family meal, bringing a relaxed, decidedly French approach to dinner for two.

At the center of the table is a whole roasted chicken presented with rosemary, thyme, garlic and onion before being carved and returned to the table alongside potato purée and Margot Salad, all meant to be shared, for USD 76 for two. Guests can add a glass of Charles Heidsieck Brut Réserve Champagne for USD 10. The inspiration comes directly from Chef de Cuisine Christophe Truchet's childhood in France, where poulet rôti was the centerpiece of his family's Sunday table.

Growing up on his parents' farm, Truchet remembers Sundays as the one day when work stopped and his grandparents joined his parents, brother and sister around the table. His mother would roast a whole chicken with herbs and serve it family-style, often with mashed potatoes or potato gratin made with potatoes grown by his father. Years later, those same aromas of rosemary, thyme and garlic are finding their way to the table at Brasserie Margot.

“Brasseries have always been gathering places in France, and that sense of generosity and conviviality is very much a part of how we eat,” says Truchet. “For me, this dish goes back to Sundays with my family, when my grandparents would come over and we would all gather around a whole roasted chicken and potatoes. It was simple, generous and meant to be shared, and that is what I wanted to bring to Poulet & Bubbles.”

He also gives the family recipe an unexpected nod to the place he now calls home with a peanut butter gravy inspired by his six years living in the South. The idea grew from his appreciation for peanuts as a Southern ingredient and a tradition introduced to him by his wife, who grew up in North Florida. Paired with the rosemary, thyme and garlic of his childhood, the savory-sweet gravy brings together influences from both of their roots. Traditional chicken jus is also available.

Poulet & Bubbles joins a growing collection of weekly and weekend offerings that have given Atlantans and visitors alike new reasons to make Brasserie Margot part of their plans. On Thursdays, Margot Girl Dinner takes the viral dining trend and gives it the Margot treatment with Salade César, oysters, unlimited house fries and a martini for USD 35 per person, with caviar available as an add-on. Weekday dining also features an Express Lunch for just USD 35, including one hors d’oeuvre, one entrée from Le Grill, and a selection of sorbet or ice cream. Saturdays and Sundays bring weekend brunch from 11:30 am to 3:00 pm, with French favorites, house-made pastries and cocktails, while Afternoon Tea, served from 1 to 4 p.m., pairs pâtisserie and savory bites with custom-sourced JING teas and specialty coffees.
