Introducing STRADA’s Wine Pairing Menu: A Culinary Journey to Toscana at Four Seasons Hotel Cairo at The First Residence

Tuscan cuisine, also known as cucina rustica (rustic cuisine), is famous and loved all over the world as it is rich in simple, natural, aromatic ingredients. STRADA, one Cairo’s best Italian restaurants, is presenting a special Tuscan menu through November 2, 2015 to celebrate the best dishes from this renowned region.

Chef Riccardo Parisse of STRADA restaurant at Four Seasons Hotel Cairo at The First Residence presents a mouthwatering menu reflecting the best of Tuscan flavours including delicious antipasti, fresh pastas and risottos, meat and fish dishes, fresh Tuscan cheeses, and fabulous daily desserts. A wine pairing menu has been specially prepared to offer guests traditional and rustic Tuscan favourites with Tuscan wine recommendations from the Chef.

STRADA is open daily for lunch from 12:30 to 4:00 pm and for dinner from 6:00 pm to 12:00 midnight. For reservations call STRADA on 02-35671600.

Toscana Menu

Antipasti:

  • Crostoni ai Fegatini - crostini di fegato di pollo con marmellata di cipolla rossa e balsamico (chicken liver crostini with red onion jam and balsamic vinegar)
  • Patate Mantecate al Nero - patate mantecate con gamberi, nero di sepia e piselli salsa (black potato risotto with prawns and green peas sauce)
  • Seppie e Capesante - seppie e capesante con ricotta marinata, limone e polenta grissini (cuttlefish and scallop with marinated ricotta, lemon and polenta grissini)

Suggested wine pairing - Vernaccia di San Gimignano, Castello di Querceto

Primi:

  • Gnocchi Viola - gnocchi di patate ripieni di coda di bue viola ragù (purple potato gnocchi stuffed with oxtail ragout)
  • Pappardelle Quaglia - pappardelle al ragù di porcini e Quaglia (pappardelle with quail and porcini ragout) 
  • Risotto Piccione e Vino Rosso - piccione e vino rosso risotto (pigeon risotto with red wine)

  • T-Bone Steak - t-bone steak per due persone con patata arrostita (t-bone steak for two persons with roasted potato)
