Love Served Sweet: A Valentine’s Celebration at Four Seasons Resort The Nam Hai with Visiting Patisserie Chef Kevin Lopes
This Valentine’s week, the timeless bond between dining and romance takes centre stage at Four Seasons Resort The Nam Hai. Guests are invited to celebrate the season of love with two exclusive events curated by renowned patisserie artist Chef Kevin Lopes from France, as well as a delightfully intimate mixology lesson.
“Every dish captures a moment of love, blending the soul of Vietnamese gastronomy with French artistry,” shares Chef Kevin. “We’re very excited to share the spirit of romance with our guests at Four Seasons Resort The Nam Hai.”
Arriving from JY’s, a 2 Michelin star restaurant in Colmar, France, Chef Kevin is known for transforming patisseries into immersive experiences, with bold flavours and artistic flair at the heart of each creation. A feast for all the senses, his innovative menus are as visually stunning as they are delectable.
Love at First Bite: Valentine’s Afternoon Tea
Loved ones can come together at the newly re-opened Beach Bar for a limited-edition Afternoon Tea, meticulously crafted by Chef Kevin to incorporate homegrown ingredients such as coconut, pandan and Vietnamese chocolate.
Delight in a selection of delicate Valentine’s-themed desserts, each one infused with a touch of amour. From fruity and floral to rich and indulgent, a range of refined flavours unfurl through creations such as heart-shaped passionfruit macarons, velvety truffles and aromatic rose petit fours. Flavour Quintet: Seven-Course Degustation
Journey through a mesmerizing progression of tastes, concluding with a sweet crescendo through a sumptuous seven-course menu. Incorporating the five signature flavours of the NAYUU dining philosophy - umami, salty, sour, bitter and, of course, sweet - Chef Kevin merges regional ingredients with unexpected twists to deliver a playful and unforgettable Valentine’s feast.
Standout dishes include the showstopping “starter,” composed of marinated raspberries in beetroot-cinnamon juice with wasabi ice cream, and the inventive “main course,” a medley of iced button mushroom parfaits, roasted coconut shortbread, tapioca and tangy pomelo. The tastebud-tickling journey comes to an end with Venezuelan chocolate mousse, topped with caramelized cocoa nibs and Nam Bô pepper ice cream.

The signature cocktail is the playful yet elegant JELL-OVE. Bring together ingredients such as pink elderflower liqueur JELL-O, raspberries, lemonade and Champagne, resulting in a mesmerizing pour that’s equal parts beautiful and delicious.
