Taikun Sushi Debuts Pop-Up Omakase Experience This Winter at Four Seasons Resort and Residences Jackson Hole

Embark on a culinary journey this winter as Four Seasons Resort and Residences Jackson Hole welcomes a pop-up omakase residency from New York City-based Taikun Sushi. Offered in partnership with restaurateur Ryan Chadwick – known for concepts including Grey Lady, Nakazawa Aspen, Canary Club and Escobar Aspen – this experience builds upon previous pop-up locations in Miami, Laguna Niguel and Aspen.

The omakase pop-up will unfold in Ascent Lounge at Four Seasons. Set against the scenic slopes of Rendezvous Mountain, guests will enjoy a special tasting menu at an intimate, custom-built, eight-seat sushi counter. The weekly rotating “chef’s choice” menu highlights the season's most premium fish, perfectly paired with a handpicked selection of sake and wine.

Leading the experience is Chef Yoshikazu “Kazu” Ebina, a Tokyo native with 25 years of experience behind omakase counters at top sushi restaurants. He previously worked as an omakase chef at the Michelin-starred Den at Azabu, as well as at Taikun Sushi's pop-ups in Aspen, Colorado and Miami, Florida at the brand’s sister property, Four Seasons Hotel Miami.

Chef Ebina will source the majority of the fish directly from Tokyo’s Toyosu Fish Market, ensuring only the freshest and finest selections for each seating. The menu features a selection of appetizers, leading into several nigiri courses and a dessert course to finish. Signature dishes include Japanese A5 Wagyu topped with Hokkaido Uni and Ossetra Caviar, Otoro with Foie Gras, and Shima Aji with Yuzu Kosho. Enhancing the omakase journey, Taikun offers a sommelier-curated pairing of premium sake and wine.
