Sundara at Four Seasons Resort Bali at Jimbaran Bay is turning up the heat, and the colour, with the launch of three new dining experiences. The beachfront destination is reaffirming its place as one of Bali’s most exciting fine dining venues, offering a sensorial journey that blends culinary innovation, sustainability, and laidback coastal living.
Central to this transformation is the appointment of renowned mixologist Paul Minea as the Resort's Bar Manager, bringing a fresh wave of creative focus and energy to the Resort’s drinks program. With a deep respect for local ingredients and a commitment to combining storytelling with sustainable mixology, Paul is redefining the way guests experience Bali in a glass.
“This isn’t just a menu refresh, it’s a new culinary chapter for Sundara,” says Michel Eschmann, Director of Food and Beverage at Four Seasons Resort Bali at Jimbaran Bay. “We’ve reimagined the Sundara experience as a seamless journey from brunch through to golden hour, with food, drinks, and atmosphere all perfectly in sync. And with Paul Minea now leading our bar program, there’s even more reason to sip, savour, and soak up the views.
New Experiences Unveiled This Season at Sundara:
Pink Brunch — Every Sunday from 11:30 am – 3:00 pm
Life’s rosier by the ocean. This playful new brunch concept features pink-hued seasonal dishes, indulgent seafood, and a partnership with Whispering Angel Rosé. Served with a splash of beach club energy, it's aesthetically pleasing and designed for leisurely afternoons with friends.
Chef’s Table — from 6:00 pm – 9:00 pm
Rooted in his Swedish reverence for the sea and love of Indonesia’s aromatic spices, Chef de Cuisine David Gavin brings over 15 years of fine dining experience to this intimate journey. Chef’s Table honours Jimbaran’s fishing village heritage through whole-fish butchery and hyper-local ingredients: every part of the catch, from crispy skin to marrow-rich bone, is respected and reimagined in a story of eco-conscious cooking. Each course becomes a dialogue between land and sea, memory and flame, crafted with elegance and sustainability at its core.
The journey begins with a Head-to-Tail, Heart-to-Table gathering from 6:00 pm - 6:45 pm, this is followed by an Aperitif and Canapés at TELU. Guests will then move to Sundara via a buggy for the Chef's Table dinner which starts at 7:00 pm and finishes at 9:00 pm.
Sundown Social — Golden Hour, Elevated – Daily from 5:00 pm – 7:00 pm
Sundara’s iconic sunset scene gets a fresh glow-up with the Sundown Social, a new golden hour ritual, pairing sunset-perfect cocktails and delicious small plates with sweeping views over Jimbaran Bay. With Paul Minea’s relaxed, approachable, low-ABV aperitivo style cocktails designed for late afternoon enjoyment, guests can sip responsibly while soaking up every gorgeous golden ray.

With more than 15 years of experience behind award-winning bars and five-star hotels, Paul Minea brings his skill, leadership, and passion for sustainable mixology to Jimbaran Bay.
A 2024 IBA World Cocktail Championship Global Finalist and UKBG National Cocktail Competition winner, Paul’s accolades span multiple international competitions. Outside of work, he enjoys cold lake swims, skydiving, football, and the occasional bungee jump. “It’s not just the destination or the journey that defines you, it’s who you become along the way, and who you share it with,” shares Paul when reflecting on his career so far.
