At the heart of the celebration is an exquisite eight-week seasonal menu at Michelin-restaurant Zi Yat Heen, which is one of 14 celebrated Four Seasons Chinese restaurants across Asia Pacific taking part in the broader Passages of Spring initiative.
A Culinary Calendar of Seasonal Highlights
Zi Yat Heen's eight-week menu celebrates the freshest ingredients of the season—tender asparagus, earthy morels, and light bamboo shoots. Highlights include Steamed Garoupa with ham and caviar, Sautéed Clams with asparagus and black truffle, and Crispy Chicken with black truffle. Other offerings feature Sautéed Lotus Root with morel mushrooms and Poached Pork Liver with spring vegetables. Each dish lets the natural flavours of the season shine through simple, careful preparation—a true taste of spring's finest.
Throughout March and beyond, other signature restaurants will unveil a series of culinary highlights, each capturing a distinct facet of the season. The lineup begins with the Sakura Harmony Cake—a confectionery ode to spring layering cherry blossom dreams with matcha and strawberry—followed by A Tale of Two Cities at Belcanção, a unique guest chef collaboration bringing together the aromatic spices of South India and the rich heritage of Macanese flavours. The Spring Awakening Afternoon Tea at Xiao Ting celebrates the season's first blush with floral notes of chrysanthemum, sakura, butterfly pea, and rose unfolding in perfect harmony. By the end of March, Belcanção will launch its Australian Dinner Buffet featuring indoor BBQ, hearty pies, and sweet indulgences for a taste of Down Under. Rounding out the celebrations, Ohte places sakura centre stage, where guests can savour the delicate Sakura Sashimi Rice Bowl complemented by sips of floral whispers that evoke the gentle essence of the season.
