Unique Celebrations in Its Private Function Rooms and a New Year’s Eve Gala That Has Become a Christmas Institution in Madrid

For the Christmas season, the function rooms at Four Seasons Hotel Madrid are transformed into exclusive settings for corporate gatherings, family reunions and special moments shared around the table.

For the most special occasions, Four Seasons Hotel Madrid offers private experiences designed to let you enjoy Christmas in the most exclusive way possible. To round off the year in the best possible way, the hotel is hosting an exceptional New Year’s Eve Gala that will begin with a welcome cocktail designed to take guests on a journey through the world of haute cuisine. Highlights among the first courses include the duck foie gras macaron with a hint of sherry, the red prawn tartare with gazpachuelo pearls and a pickled marinade emulsion, the scarlet prawn bonbon with a lace tuile and a selection of wild seaweeds, and free-range egg yolk with black truffle topped with a veil of Iberian pork jowl. The menu is enhanced by a number of live stations that include a shellfish and caviar station and the classic station serving 100% acorn-fed Iberian ham, sliced to order. All this is accompanied by Ruinart R Brut champagne.

This will be followed by the main menu, comprising a carefully curated sequence of dishes paired with a selection of wines especially chosen for the occasion. The experience will begin with confit mushrooms on a consommé base and fresh white truffle accompanied by Pedra de Guix 2022 from Terroir al Límit; followed by a scarlet prawn raviolón with a saffron-infused fine shellfish suquet stew paired with Château d’Esclans 2024. The main fish course will be roast sea bream with royal sea cucumber, Dom Pérignon beurre blanc, seaweed cream, tuile and ‘000’ caviar accompanied by Albillo Mayor Reserva 2018 from Valduero; while the main meat course will feature a Wellington sirloin with black truffle duxelles, creamy mashed potato and a Pedro Ximénez Périgueux sauce paired with Castillo de Ygay 2012 from Marqués de Murrieta.

The meal will conclude on a sweet note with a rhubarb sorbet, hibiscus frost and rose gel, followed by a dessert of single-origin chocolate, orange and coffee with orange and vanilla ice-cream accompanied by Oremus 5 Puttonyos 2019. A selection of petit fours will be served to round off the meal, comprising Marcona almond polvorón, saffron-toasted egg yolk and Jijona turrón bonbon with fleur de sel.

As midnight approaches, the time will come for the chimes and the traditional twelve good luck grapes, when guests will be able to toast with Krug Grande Cuvée before the New Year’s Eve party gets underway, which will continue until 04:00 with a premium open bar, live music, a DJ and live entertainment. To recharge your batteries, the experience will include such savoury options as sourdough rolls with acorn-fed Iberian pork loin and mini smash burgers with smoked Idiazábal cheese, as well as churros with hot chocolate, truffles, macarons and sweet treats.
