On September 6, 2026, Chapeau Palma, which was included in the prestigious 50 Best Discovery selection, will headline a new edition of Sunset Sessions at Four Seasons Resort Mallorca at Formentor. The evening will feature bartenders Mateo Tolosa and Rodrigo Álvarez presenting four cocktails from their latest menu, paired with live music and an exclusive selection of tapas created by Chef Javier Hoebeeck.

As part of Four Seasons Resort Mallorca at Formentor’s vibrant summer program, Sunset Sessions continues to celebrate exceptional gastronomy and mixology, bringing acclaimed chefs, bartenders and creative talents to Cercle Bar and other unique spaces across the resort.

Four Seasons Resort Mallorca at Formentor invites guests to savour the lingering spirit of summer with a new edition of Sunset Sessions, its signature sunset series that blends mixology, gastronomy and music against the backdrop of one of Mallorca’s most iconic landscapes. Headlining this third edition is Chapeau Palma, one of Spain’s most acclaimed cocktail bars, for an experience inspired by the flavours, aromas and essence of the Mediterranean.

Hosted at Cercle Bar from 6:30 pm to 10:00 pm, the event will see Chapeau Palma’s bartenders Mateo Tolosa and Rodrigo Álvarez present four signature cocktails from their new menu. The experience offers guests the opportunity to discover the creative identity of one of Palma’s most acclaimed cocktail destinations within the extraordinary surroundings of Four Seasons Resort Mallorca at Formentor, where the natural beauty of the Formentor peninsula meets uninterrupted Mediterranean views, creating the perfect backdrop from sunset into the evening.

The experience will be enhanced by live music and a specially curated culinary offering by Chef Javier Hoebeeck, featuring a selection of tapas thoughtfully designed to complement and elevate Chapeau Palma’s innovative cocktail creations.

Chapeau Palma’s proposal marks the celebration of its tenth anniversary. To commemorate a decade of creativity and craftsmanship, the bar has revived some of the most iconic and best-selling cocktails from its history. These signature creations now feature on its latest menu and will take center stage during this edition of the Sunset Sessions.

Throughout the evening, guests will discover four distinctive creations from Chapeau Palma’s latest menu: “Tinder Martini”, a vibrant and exotic cocktail layered with grapefruit and passion fruit notes; “De Famoso no tiene nada”, an elegant composition balancing citrus, smoky and floral accents; “Dirty Bamboo Highball”, a savoury, saline-driven serve inspired by the wines and flavors of Jerez; and “Figoni”, a Mediterranean-inspired cocktail in which fig leaf and red berries take center stage.

The experience will also showcase a selection of Cercle Bar’s signature cocktails. Highlights include “Euterpe”, a bright and refreshing blend of tomato water and jasmine; “1930”, an elegant expression of citrus and spice; “The Shelter”, a comforting and layered creation infused with burnt orange and caramelized honey notes; and “Colores”, a fragrant composition where blueberries and roses come together in a distinctly floral and aromatic profile.

The evening will be further elevated by a carefully curated selection of small plates by Executive Sous Chef Javier Hoebeeck, conceived as a dialogue between food and cocktail craftsmanship. Created especially for the occasion, the menu will feature crispy corn tortilla, red tuna carpaccio, cherry tomatoes and cochinita pibil taco, highlighting bold flavours and Mediterranean influences.

The culinary journey continues with red prawn aguachile, brioche steak tartare, a wagyu cecina sandwich and warm ensaimada, offering guests a refined progression of flavors designed to complement the cocktail experience at Cercle Bar.

As part of the experience, guests will be able to enjoy a special format priced at EUR 45, including two drinks and two tapas-sized dishes. Rather than following a fixed pairing menu, the culinary creations will not be tied to specific cocktails, allowing guests to explore the food and beverage offerings independently and according to their own preferences.

Designed as a relaxed and convivial tasting experience, the format invites guests to discover Chapeau Palma’s latest cocktail creations while enjoying the unique atmosphere of Cercle Bar at sunset, overlooking the Mediterranean as day gives way to evening.

The collaboration with Chapeau Palma marks the third edition of Sunset Sessions, following previous events held in partnership with Brassclub and Fitz Bar. It forms part of a broader programe through which Four Seasons Resort Mallorca at Formentor is shaping its own distinctive calendar of gastronomic and mixology experiences, built around collaborations with leading industry talents and concepts created specifically for the destination.
