Located directly on the shoreline, the restaurant at Four Seasons Resort Mallorca at Formentor once again emerges as one of the island’s premier summer destinations, offering a collection of new experiences alongside a menu that artfully combines gastronomy, natural beauty and Mediterranean lifestyle.

New for 2026 - From Aperitifs to Sunset and Beyond

This season, Llum i Sal unveils a curated collection of new experiences, designed to unfold in harmony with the rhythm of the Mediterranean, from aperitif hour through sunset and into the evening.

Seaside Dining - Beginning May 15, 2026, the restaurant introduces dinner service, extending the experience into the evening. The menu centres on techniques such as grilling and salting, with a focus on seafood and preparations that highlight provenance and seasonality.

The menu brings together dishes designed for sharing with signature creations that highlight the quality of the ingredients, including grilled Mallorcan squid with squid ink emulsion, Sóller red prawns with garlic sauce, and dry-aged grouper in pil-pil sauce with piquillo peppers. It is complemented by fresh fish of the day baked in a salt crust and a selection of grilled cuts.

The opening will be marked by an inaugural evening on the same day, featuring a live tuna-cutting demonstration, music and a sunset gastronomic experience.

Vermouth & Gilda Ritual - A highlight of the day unfolds with the Vermouth & Gilda Ritual, a daily gathering where gastronomy, music and Mediterranean spirit come together featuring Bodega Suau.

At its heart, vermouth is paired with a curated selection of reimagined gildas (Spanish-style snacks), offered in a format intended for leisurely enjoyment - extending naturally from aperitif into the evening.

Sun & Sea Menu By the Beach - Enhancing the experience, Llum i Sal introduces a beach menu designed for relaxed, effortless dining by the sea.

The menu features a selection of light, casual dishes that celebrate ingredient quality, from mini gildas and fried baby squid with squid ink emulsion to oysters with tarragon mignonette. Fresh offerings such as tomato carpaccio with goat cheese and locally inspired salads bring a vibrant, seasonal touch.

For those seeking something more generous, the menu extends to include king crab rolls with truffle, fish and chips and pastrami bagels each crafted with creativity and a nod to local flavours.

The Art of Midday Dining

At lunchtime, Llum i Sal celebrates the day’s catch with a fresh, unfussy menu rooted in local ingredients and pure Mediterranean flavour. Designed for sharing, it reimagines classic beachside favourites with a contemporary touch.

Highlights include grilled scallops with almond cream and grapes, Mallorcan octopus with potato and green mojo, and lobster croquettes, alongside baby squid with squid ink emulsion and gratinated razor clams.

The experience continues with ingredients such as Sóller red prawns with garlic sauce, local lobster with fried eggs and caviar, and gratinated XXL scarlet prawns where tradition meets technique in a modern coastal expression.

The offering concludes with sharing-style rice dishes, including seafood “senyoret,” black rice with scallop and bone marrow and carabineros with pork jowl, complemented by desserts such as mango givré and Idiazabal cheesecake - honouring a cuisine centred on simplicity and ingredient-led excellence.

A Seaside Sanctuary
