Four Seasons Hotel Montréal announces that Chef Jason Morris, Executive Chef of Marcus Restaurant, will now oversee the Hotel’s banquet and catering services, bringing his visionary culinary expertise to private events and grand celebrations. To inaugurate this exciting transition, Chef Morris will collaborate with Michelin-starred Chef Simone Zanoni of Le George at Four Seasons Hotel George V, Paris, for an exclusive Four Hands Dinner on October 8, 2024, at 6:00 pm.
This highly anticipated event, Une soirée sous le signe de la gastronomie et de la Dolce Vita, will unveil Chef Morris’s innovative approach to banquets while raising funds for the Dr. Ronald-Denis Foundation, dedicated to advancing men’s health initiatives across Quebec. Under Jason Morris’s guidance, Marcus has redefined fine dining in Montréal, and his leadership of the Hotel’s banquet services promises to elevate the culinary experience for private gatherings and special occasions at Four Seasons Hotel Montréal.
Chef Jason Morris is renowned for his inventive and modern approach to cuisine, seamlessly blending premium ingredients with cutting-edge techniques. A native of Montréal, Morris has honed his craft in Michelin-starred kitchens around the globe, from New York to Scandinavia. His bold, creative dishes have earned him acclaim, and now, with the addition of the Marcus menu to the Hotel’s banquet offerings, guests can savour the signature Marcus experience at private events.
Joining him for this exclusive evening is Chef Simone Zanoni, celebrated for his Mediterranean-inspired cuisine at Le George in Paris. While the focus of the evening will be on Morris’s new role, Zanoni will add a refined Mediterranean touch, creating a harmonious blend of modern innovation and timeless elegance.

Guests will be whisked away on an unforgettable seven-course culinary journey, meticulously crafted by both chefs to celebrate the season’s finest ingredients and boldest flavours:
- First Course: A delicate Tarte Tatin of sweet tomatoes, crowned with a decadent Cacio e Pepe Ice Cream, a perfect harmony of savoury and sweet that awakens the senses.
- Second Course: Tender Endives and earthy Chestnuts embrace the flavours of slow-roasted Piglet, enhanced with the natural sweetness of caramelized Apples. A symphony of autumn on a plate.
- Third Course: An ode to the sea with Cod paired with market-fresh vegetables, dressed in a bright vinaigrette, each bite reminiscent of a coastal breeze.
- Fourth Course: Succulent Beef from Lille nestled among a bed of wild Forest Mushrooms, accompanied by delicate Handmade Ravioli. Comforting, rich, and deeply satisfying.
- Dessert: An enchanting Herb and Pistachio Semifreddo, a light and refreshing finale that dances on the palate with notes of garden herbs and earthy pistachios.
- Mignardises: A sweet farewell, an exquisite selection of petit fours and confections to complete this extraordinary feast.
The proceeds from this elegant event will benefit the Dr. Ronald-Denis Foundation, which is committed to improving access to healthcare for men across Quebec. The foundation’s focus includes the early detection and treatment of critical health conditions such as prostate cancer, cardiovascular disease, and mental health issues, areas that are often under-diagnosed and under-treated. The foundation has played a pivotal role in expanding health services for men throughout the province.
