Marcus Night Bar at Four Seasons Hotel Montreal Unveils an Exclusive Tasting Experience by Jay Lawson from Its New Cocktail Menu

Marcus Night Bar at Four Seasons Hotel Montreal has unveiled a new cocktail menu, curated by Head of Mixology Jay Lawson, alongside an exclusive Cocktail Tasting Experience designed to immerse guests in a modern reinterpretation of classic cocktails.

The menu features 12 masterfully crafted cocktails and 3 refined non-alcoholic options, each reimagining a classic through contemporary techniques with a focus on sustainability, including minimizing waste and using ingredients sourced within the hotel. Guests can expect inventive presentations, from delicate foams to aromatic sprays, designed to elevate both flavour and visual artistry.

“This new menu is about reimagining the classics with intention,” shares Jay Lawson, Head of Mixology at Marcus. “We drew inspiration from everything around us, from the hotel’s design and culinary philosophy to the ingredients found within its walls. It’s about creating something beautiful, sustainable, and deeply connected to where it’s served.”

Complementing the menu is the Cocktail Tasting Experience, which offers a guided tasting of five creations, beginning with a welcome drink and including one non-alcoholic option. Each cocktail reflects Lawson’s creative vision, transforming familiar recipes into bold, unexpected experiences that celebrate artistry, flavour, and sustainability. This experience is priced at CAD 75 per person.

Lawson’s approach combines technical mastery with a mindful approach to sustainability, ensuring each cocktail delivers a memorable sensory experience. Both the menu and tasting experience are available Thursday through Saturday, from 4:00 to 10:00 pm, inviting guests to unwind and savour the sophisticated ambiance of Marcus Night Bar.
