On November 15, 2019, James Beard award-winning Chef Michael Mina is bringing a taste of Oahu to San Francisco with a special line-to-table evening showcasing the best of Mina’s Fish House, his signature beach front dining establishment at Four Seasons Resort Oahu at Ko Olina. MICHAEL MINA San Francisco will welcome Executive Chef Garrick Mendoza and the restaurant’s in-house fish sommeliers, Ryan Houser and Saui Matagiese for an exclusive tasting menu paying homage to the traditional Hawaiian fish house.
The five-course menu will showcase popular offerings from Mina’s Fish House including delectable island-style dishes such as egg yolk tajarin topped with red abalone and osetra caviar; ginger and scallion-steamed Kona ,ampachi, also known in Hawaii as “designer yellowtail”; and spice-crusted long tail snapper served alongside braised rainbow chard and saffron basmati rice. Additionally, guests will sip on curated wine pairings by Jeremy Shanker, master wine sommelier at MICHAEL MINA. The evening will kick off with complimentary pre-dinner “If Can, Can” cocktails, the iconic beverage offering at Mina’s Fish House, served in a SPAM can and made with spirit of choice, orange curacao, pineapple, lilikoi, lime and orgeat.

Joining Chef Mina are Mina’s Fish House’s very own fish sommeliers. This unique role created by Chef Mina requires the same hard-earned knowledge and skillset of wine sommeliers. Ryan House and Saui Matagiese use their extensive understanding of local seafood to pair the right fish with menu items based on each guests’ personal tastes and preferences. The fish sommeliers will be available during the event to make each diner’s experience engaging and enriching – inviting a deeper connection to Hawaii’s rich culture and spirit of aloha.
