Four Seasons Resort Orlando Welcomes Special Guests for a "Miami Takeover" Dinner at Plancha

Four Seasons Resort Orlando at Walt Disney World Resort is spicing up the night with a special “Miami Takeover” dinner, featuring three prominent guest chefs visiting from Miami, recently named by Travel Channel as “one of the nation’s hottest dining scenes.”  

On June 25, 2016 at 6:30 pm, the Resort’s Plancha restaurant at Tranquilo Golf Clubhouse will welcome Executive Chef Aaron Brooks from EDGE, Steak & Bar at Four Seasons Hotel Miami; Executive Chef Dena Marino from MC Kitchen; and Executive Chef Jose Mendin from Pubbelly Restaurant Group.  The chefs will cook alongside Executive Sous Chef Sam Faggetti and Executive Pastry Chef Rabii Saber from Four Seasons Resort Orlando.

“We’re excited to work with Chef Brooks from our sister Four Seasons property as well as two more of the city’s hottest chefs,” says Stephen Wancha, Director of Food and Beverage for Four Seasons Resort Orlando. “Miami is well known for its sophisticated and innovative dining options, and we’re pleased to bring a taste of vibrant Miami to Orlando for what’s sure to be an unforgettable evening.”

The five-course menu includes a first course of hand-crafted charcuterie by Chef Brooks of EDGE, Steak and Bar; the second course is a crudo by Chef Faggetti; the third course is a parmigano reggano cavatelli pasta by Chef Marino; the fourth course is a short rib with duck fat potatoes by Chef Mendin; and the dessert course is roasted peaches with thyme whipped crème fraiche and blueberry compote by Chef Saber.

About the Guest Chefs

Aaron Brooks, Executive Chef at EDGE, Steak and Bar at Four Seasons Hotel Miami, has cooked around the world with Four Seasons Hotels and Resorts since 2001. A native Australian, his journey around Four Seasons kitchens from Vancouver to Boston has orbited around cultures and cuisines, from pan-Asian to New England. Since launching EDGE, Steak and Bar, Chef Brooks has immersed himself in the Miami culinary scene and its Latin culture.  Focusing on preparing quality products right, and sourcing available local produce and flavours, he's earned himself and the restaurant recognitions that include "Best of the City" by MIAMI magazine and one of the "Best Happy Hours" and "Best Brunch Buffets in America," by Travel + Leisure.  He’s also been named "Miami's Lambassador," by Meat & Livestock Australia and most recently one of Miami's "Hot Shot Chefs" by Ocean Drive magazine.

Jose Mendin, Pubbelly Restaurant Group’s Founding Partner and Executive Chef, has taken more than six culinary concepts to critical acclaim (Pubbelly, Pubbelly Sushi, Barceloneta, Macchialina, PB Steak, and recently opened L’echon Brasserie).  He has been a recognised semi-finalist of the James Beard Foundation’s Best Chef South awards in 2011, 2012, 2013, 2014 and 2015. The brand’s growing empire has launched exciting new projects including Food Republic aboard Norwegian Cruise Line’s Escape, which launched November 2015; Pubbelly Sushi in Casa de Campo, Dominican Republic, which marked their first international expansion; and their first concept in Miami’s mainland, an American eatery, PB Station and its sister concept, a rooftop bar called Pawn Broker.

Dena Marino, owner of MC Kitchen in Miami’s Design District, showcases a rustic Italian approach to her cuisine, with modern techniques through the use of seasonal organic ingredients, house-cured meats and sausages, and house-made cheeses and pastas.  Originally from New Jersey, Marino arrived to South Florida via Aspen, Colorado, where she was chef at renowned restaurants including D19, Ellina and Ajax Tavern.
