Specialty cocktails utilise tea house inspiration

Classic tea flavours find their way to the bar scene with the All American Chai and Two Birds with One Stone cocktails available February 1 through April 30, 2016, at Proof, an American Canteen, and Onyx Bar & Lounge at Four Seasons Resort Scottsdale at Troon North.  The cocktails are being offered as part of Four Seasons Cocktail Quarterly initiative, a global year-long beverage-focused initiative devoting attention to one cocktail trend, seasonal ingredient or technique, brand-wide, every three months.

The All American Chai, created onsite by cocktail connoisseur and Proof Bartender Daniel Phillips, features the classic flavours of chai tea with Dancing Pines chai liqueur, a small batch distillery in Colorado.  Proof patrons can sip and savour the coffee house inspired cocktail at a cost of USD 14.

“Many liqueurs use artificial ingredients and extracts to create their desired flavour profile, but this particular distillery uses only whole, organic ingredients,” says Phillips.  “Chai is a popular combination of flavours among tea connoisseurs, so it was important for us to find a product that stays true to the essence of the spices you would find in a traditional chai tea.”

The Two Birds with One Stone cocktail, created by Onyx Lounge Assistant Manager Nick Padua, features Rishi chamomile tea. The name alludes to the drink’s versatility to be served on ice to revive and replenish after 18 holes of golf or served hot while watching the sun set over Pinnacle Peak. Local Sonoran honey adds a touch of sweetness, and house-made orange marmalade and locally grown Meyer lemons complete the cocktail. Onyx Bar & Lounge patrons can enjoy the cocktail at a cost of USD 16. Guests dining in Talavera may also enjoy the tea-infused drink, perfect as an after dinner digestif.

“Springtime in the Sonoran Desert often brings warm days and cool nights and we wanted to create a cocktail guests could enjoy at any time of day,” explains Padua. “Dewars White Label scotch lends earthy tones as a base spirit, while the Rishi loose leaf chamomile tea provides floral notes and colour.”
