With the arrival of Executive Chef Gregory James, Proof enters an exciting new chapter rooted in Americana, craftsmanship, and the spirit of Scottsdale. Since joining the culinary team at Four Seasons Resort Scottsdale at Troon North, Chef James has begun reimagining the resort’s culinary program with a renewed focus on identity, creativity, and a stronger connection to the guest experience.

The first step in that evolution began in June 2026 with the debut of Proof’s new brunch and dinner menus, introducing Chef James’ fresh interpretation of modern American classics through elevated technique, local influence, and genuine hospitality.

Proof has always represented something uniquely American to me,” says Chef James. “Even the name itself carries meaning. In whiskey making, ‘proof’ is a measure of strength and character, and I believe the same should apply to a restaurant.”

The new menus reflect that philosophy through approachable dishes guests recognize and love, interpreted with thoughtful execution, high-quality ingredients, and a stronger sense of place.

Rooted in Americana, Inspired by Arizona

At its core, the vision for Proof centres around modern American comfort food that feels approachable, memorable, and authentic.

“The smoker plays an important role in that story,” says Chef James. “It brings warmth, nostalgia, craftsmanship, and a connection to traditional American cooking methods.”

Years of living and cooking in Arizona also shaped the direction of the menus, inspiring the use of live fire, smoke, regional ingredients, desert botanicals, local citrus, and Southwestern influences that connect guests to Scottsdale and the Sonoran Desert.

“Guests come here wanting something approachable and familiar, but they also want to feel connected to the destination and experience something they cannot find everywhere else.”

American Classics, Done Right

For Chef James, “American classics done right” is about honouring dishes people already know and love while elevating them through care, consistency, and intention.

“It is not about reinventing something simply for the sake of being different,” he says. “It is about understanding why those dishes became classics in the first place.”

That philosophy comes to life through dishes that feel nostalgic and comforting while still carrying refinement and personality.

Signature Dishes Defining the New Menu

Several dishes are anchors for the new menu because they perfectly capture the direction Chef James envisions for Proof.

One of those dishes is the Smoked Prime Rib with Yorkshire Pudding: “It brings together craftsmanship, comfort, and a sense of occasion in a way that feels timeless and deeply American,” he says. “The slow smoking process adds depth and character, while the Yorkshire pudding gives the dish a nostalgic quality guests immediately connect with.”

Another standout is the Smoked Chicken Pot Pie: “It takes something incredibly familiar and comforting and elevates it through technique and attention to detail,” he explains. “The smoked chicken adds warmth and richness, while the flaky pastry and creamy filling create that unmistakable sense of comfort people crave.”

The Ideal Meal at Proof

Asked how he would experience the menu himself, Chef James describes a meal centred around sharing, conversation, and connection.

“Being Proof, and being a whiskey guy myself, I would start the evening with a classic whiskey cocktail,” he says.

From there, the Pretzel Knots are essential for the table: “They should hit the table immediately while everyone settles in and catches up. The creamy mustard and spicy cheese sauce make them comforting, fun, and incredibly shareable.”

For the main course, Chef James embraces a family-style approach, recommending the 16-ounce Smoked Prime Rib with Yorkshire Pudding, Wild Caught Pacific Salmon, and the Spicy Pasta alla Vodka alongside Crispy Brussels Sprouts and Au Gratin Mashed Potatoes.

“Variety is part of the experience,” he says. “It allows the table to explore different flavours together.”

Dessert, naturally, is meant for sharing too.

The Warm American Apple Pie, Campfire S’mores Pie, Strawberry Shortcake, and Rich Double Chocolate Cake all bring something different to the experience,” he says. “To me, that is what dining at Proof should feel like, sharing food, staying at the table a little longer, and enjoying genuine conversation together.”

Built Through Collaboration

While the menus reflect Chef James’ culinary philosophy, he is quick to emphasize the collaborative spirit behind the experience.

“Some of the best ideas came directly from the chefs and cooks who bring passion, creativity, and fresh energy into the kitchen every day.”

Through tastings, experimentation, and shared creativity, the culinary team collectively shaped the next chapter of Proof.
