Goldfinch Tavern at Four Seasons Hotel Seattle unveils its newly redesigned restaurant and bar experience, introducing a transformed central bar, dramatic wine gallery, refreshed interiors and an evolved seasonal menu rooted in Pacific Northwest ingredients and culinary craftsmanship.
Created in collaboration with Seattle restaurateur and Chef Ethan Stowell and led by Executive Chef Andrea Ferrandi, alongside Goldfinch Tavern’s Chef Jeffrey Hunter, the next chapter of Goldfinch Tavern builds upon a decade as one of Seattle’s local dining destinations. The refreshed design reflects the restaurant’s continued commitment to simply prepared Pacific Northwest cuisine and warm hospitality.
“Goldfinch Tavern has always been about celebrating the incredible ingredients and producers we have here in the Pacific Northwest,” says Stowell. “This refresh gives us the opportunity to deepen that connection while creating an inviting experience. The menu continues to focus on simplicity, seasonality and the quality of the ingredients.”
A Design Anchored in Gathering
The redesign of Goldfinch Tavern and the adjacent hotel lobby was led by KES Studio and draws inspiration from the quiet drama of the Pacific Northwest: where sea meets sky, forests meet stone and urban sophistication is softened by nature. Throughout the restaurant, rich walnut paneling, layered textures, moody ocean blues and warm stone finishes create an atmosphere that feels both timeless and distinctly Seattle.
At the heart of the redesign are an expanded bar and a new wine gallery. Framed by metal, ribbed glass, wood, and stone, the wrap-around bar creates a central stage for the restaurant. Plush lounge seating, live-edge wood cocktail tables and intimate lighting create a layered dining experience that moves effortlessly from afternoon cocktails to celebratory dinners overlooking Elliott Bay.
The wine gallery clad in striking marble introduces a dramatic focal point at Goldfinch Tavern’s entrance. It anchors the regional wine culture through a curated collection of Pacific Northwest growers, complementing the restaurant’s wine program and dinner series.
Celebrating the Pacific Northwest on Every Plate
“The refreshed seasonal menu highlights regional seafood, locally sourced produce and signature tavern classics with new additions, including a new Butcher’s Cut section,” says Ferrandi. “Goldfinch Tavern continues to honour its culinary heritage through signature dishes that Ethan introduced, such as the signature cedar plank salmon, while introducing new offerings like the halibut cioppino to balance familiar favorites with a fresh perspective on seasonal dishes.”
Goldfinch Tavern sources exclusively from Washington's Pure Country Farms, whose family farming commitment to locally grown, humane, and sustainable ranching reflects the Pacific Northwest’s agricultural heritage. Every Butcher’s Cut meat is 21-day dry aged to enhance depth and flavour.
“At the bar, the cocktail program draws inspiration from Seattle's neighborhoods, landmarks and culture, while the pastry program introduces refined seasonal creations designed to conclude the dining experience with a sense of place and discovery,” continues Ferrandi.
Weekend Brunch and New Dining Experiences
A cornerstone of the Goldfinch Tavern experience, weekend brunch continues to offer one of Seattle’s most sought-after gatherings. Relaunching at the end of June, guests enjoy an abundant appetizer and dessert buffet showcasing house-made specialties, complemented by a choice of plated entrée and sweeping waterfront views.
A new weekly dining series, Ethan & Friends, will debut as Goldfinch Tavern’s signature Tuesday experience. Hosted by Chef Ethan Stowell and the culinary team, the evening will feature rotating à la carte specials developed in collaboration with local chefs, farmers, fishers, producers and artisans, celebrating the relationships and ingredients that define Pacific Northwest cuisine.
Floor-to-ceiling windows throughout Goldfinch Tavern frame sweeping views of Elliott Bay, the Seattle Great Wheel and the Olympic Mountains. The restaurant seats 183 guests, including two private dining rooms accommodating up to 20 guests.
