The dessert menu at Sensei Lanai, A Four Seasons Resort presents an inspired approach to blending unique flavours with culinary knowledge. At Sensei Lanai, the adults-only Hawaiian wellness retreat, the clean food philosophy is centred not only on the enjoyment of each dish but also on how a guest feels long after the last bite.

“Wellness is the focus across the board, but that doesn’t always mean removing the elements that make a sweet bite enjoyable,” says Christian Macke, Assistant Pastry Chef at Sensei Lanai, A Four Seasons Resort. “The goal is to create desserts where a guest enjoying the dish cannot tell what has been substituted or replaced to accommodate dietary or allergenic needs.”

The result is a curated dessert menu that feels indulgent while remaining aligned with the resort’s wellness philosophy. Monk fruit sweetener replaces refined sugar, gluten-free and dairy-free preparations are crafted with care, and each element serves a purposeful role. Menu highlights include:

Honeydew Yogurt Espuma - A favourite of Chef Macke, this ethereal creation begins with a base of Pandan Coconut Sauce paired with sous vide compressed honeydew spheres. Lanai Honey Vanilla Semifreddo spheres, crafted using honey sourced from beehives on the island, are layered throughout. A velvety Greek yogurt espuma completes the dish, finished with honeydew granita flakes and a salted toasted rice tuile that delivers a savoury crunch in every bite. Monk fruit sweetener reduces overall sugar content, resulting in a gluten-free dessert that is both mindful and flavourful.

Kiwi Coconut Verrine - Served elegantly in a coupe glass, this dessert layers Coconut Lime Panna Cotta with Kiwi Sorbet, Coconut Foam, Kiwi Compote, and Kiwi Gelée. A tropical composition that is both dairy-free and gluten-free, and a testament to how dietary accommodation can feel like luxury.

Matcha Monk Fruit Basque Cheesecake - This gluten-free, vegetarian dessert features monk fruit sweetener paired with Whipped Crème Fraîche, Strawberry Coulis, and Strawberry Medallions for a distinctive flavour pairing.

Pineapple Gold - This fruit-forward dessert features Ginger Pineapple Compote, Fresh Coconut Milk, and Lemongrass Rum Foam in a vegan, gluten-free homage to Lanai’s history as one of the world’s largest pineapple plantations.

Lilikoi Banana - A celebration of island flavours, this gluten-free dessert pairs Banana Rum Cream with Lilikoi Caramel and Banana Lilikoi Sorbet.

Milk Chocolate Yuzu - An East-meets-West composition featuring Hazelnut Feuilletine, Yuzu Whipped Ganache, Soy Reduction, and Yuzu Sorbet. Each element is layered to achieve balance, texture, and brightness in a gluten-free finish.

The artistry behind these creations belongs to Assistant Pastry Chef Christian Macke, a California-born culinary talent whose career is a story of dedication, craft, and ambition. A native of Santa Maria on California’s Central Coast, Macke relocated to Los Angeles in 2011 following high school graduation to pursue his passion for the culinary arts. He honed his skills at The Art Institute of America – North Hollywood while working at several notable establishments, including Pedalers Fork in Calabasas, Rare by Drai’s on Sunset, Hyperion Public in Silver Lake, and the Ace Hotel in Downtown Los Angeles.

Macke joined Four Seasons in 2015 and, by 2019, advanced to lead the pastry team at Four Seasons Hotel Los Angeles at Beverly Hills. His journey to Sensei Lanai represents the latest expression of his culinary philosophy – one that embraces innovation, precision, and the belief that wellness and enjoyment coexist.
