Nothing says summer in Seoul like bingsu. Four Seasons Hotel Seoul is set to tempt tastebuds with the launch of a new menu celebrating everyone’s favourite Korean iced milk dessert. From now to September 30, 2025, bingsu fans can chill in the city with Insta-worthy creations showcasing the vision of the hotel’s new Executive Pastry Chef Steven Jin.
The theme may be “Local & Classic,” but Chef Steven puts his unique spin on the beloved shaved ice delight. Two vibrant flavours, Jeju Apple Mango and Maru, combine traditional tastes with pioneering presentation. Fancy trying both? A ten per cent off Combo Bingsu offer satisfies every sweet tooth. Delicious condiments served with each dessert allow guests to customise according to their own inner culinary artist.
From winning silver at the French Dessert Championships to honing his craft across restaurants that boast a combined 13 Michelin stars, Chef Steven’s career to date is as dazzling as his creations. This summer, guests can access his signature creativity via the new menu, available daily from 11:00 am to 10:00 pm in the hotel’s laidback lounge Maru.

Jeju Apple Mango Bingsu (KRW 149,000): The buttery richness of Korea’s rare, ultra-sweet Jeju Apple mango is paired with St-Germain's delicate French elderflower liqueur for a sophisticated tropical-floral harmony. A chewy rice cake marinated in mango juice adds texture, while a sphere of sauce prepared using Chef Steven’s molecular cooking techniques provides an eye-catching pop of yumminess. Pretty additions include sliced mango, whipped cream, gold leaf and an edible flower.
Maru Bingsu (KRW 89,000): Call it K-culture in a bingsu. Classic Korean flavours such as homemade red bean paste and earthy matcha cream come together in a super cool work of culinary art. Fluffy milk ice, vanilla Chantilly cream and condensed milk bring sweet sensations to every mouthful. Alongside the timeless taste of red bean, a white chocolate decoration echoes the elegance of Maru’s traditional Korean window frames.
