Introducing Koi: Experience Contemporary Japanese Dining at Four Seasons Resort Seychelles
Eastern flavours arrive in Seychelles with the launch of the Resort’s Japanese outlet and the fully renovated Zez Restaurant, now serving up pan-Asian cuisine
Located among the lushly forested hillsides of Petite Anse bay, the new Japanese restaurant of Koi has become the latest addition to the culinary scene at Four Seasons Resort Seychelles.
Serving an authentic menu of sushi, sashimi and other Japanese favourites, Koi is open daily for dinner, with a capacity for 32 diners across a choice of tables and bar counter seating. With wall to wall windows behind the showcase sushi counter, guests may enjoy sunset views over the Indian Ocean in a fully air-conditioned, contemporary interior that reflects a Japanese character of design.
Chef Leong Then, Koi’s lead chef and the Resort’s Asian Chef de Cuisine comments: “The intimacy and authenticity of Koi create the perfect ambience for diners to enjoy the clean, fresh flavours of our Japanese menu. Sushi is a key focus of what we are offering, not only as this is a staple of Japanese cuisine, but also due to the abundance of seafood found here in Seychelles – there’s no better place to try it.”
Koi Restaurant opens alongside the renovated Zez Restaurant and Bar, which has been re-designed under a pan-Asian concept. The menu, also created by Chef Leong and his team, is inspired by the cuisines of Singapore, China and Japan. Signature dishes include Singaporean chilli crab, freshly-made wok-fried noodles, and Cantonese tiger prawns with shaoxing wine.
The opening of Koi adds to the already eclectic mix of dining experiences at the Resort and brings the total outlets to three restaurants and two bars. Guests can now dine their way around the world during their stay, with the poolside restaurant Kannel serving a selection of Creole and Mediterranean-inspired dishes, pan-Asian flavours being offered in Zez, and Koi being home to Japanese specialties. A weekly calendar of theme nights also provides opportunity to sample other worldly flavours, such as the Creole night "Sware Kreol" and a locally inspired table-top BBQ experience, "Griyaz Kreol."
