A Taste of the City: Polaroids of Singapore, by Four Seasons Hotel
At a time where guests are seeking authenticity, immersive storytelling, and being able to build connections through thoughtful experiences, Four Seasons Hotel Singapore unveils its newest cocktail menu at One-Ninety Bar: Polaroids of Singapore, Volume I. The specially curated menu invites guests on an immersive journey through the city-state’s rich cultural tapestry, where 16 new handcrafted concoctions unfold stories of tradition reborn.
Inspired by the Chinese, Malay, Indian, and other ethnic communities, the collection of cocktails by Head Bartender Sophia Kang and team was launched on October 22, 2025, and pays spirited homage to Singapore, showcasing the city’s multicultural and diverse soul. From time-honoured recipes to the vibrant energy of local festivals, every drink captures the essence of the city’s heritage through innovative flavours and creative presentation.
Chinese Heritage
- Bei Shi’s Dance - Inspired by the Northern Lion Dance, this is a whisky-based cocktail that captures the lion’s spirited energy and celebratory essence. Rich and velvety, it comes alive with bright, lively accents from Kyoho Grape Liqueur, Mandarin Napoléon, raspberry-orange bitters, and whey, creating a bold and festive flavour experience.
- Rojak Sour - Frothy, creamy and tart, this is where nostalgia meets nuance. A vodka-based drink that distills the essence of Singapore’s beloved rojak into a glass, the cocktail is crafted with a rojak cordial infused with pineapple, cucumber, lime and a touch of briny shrimp sauce, then rounded off with falernum for depth, evoking the distinctive balance of sweet, tangy, and spicy notes popularly recognised in the local salad dish.
- Pot of Gold - Known in Hokkien as Ong Lai, the pineapple carries the promise of good fortune and blessings, weaving abundance into every celebration. In this cocktail, that spirit comes alive through bright citrus notes and a lingering, aromatic finish, enhanced by the slightly woody and subtly smoky character of mezcal.
- Yuen Yang - Inspired by Singapore’s Kopitiams (coffee shops), this cocktail evokes the comforting warmth and layered richness of a classic breakfast toast with soft-boiled eggs and coffee. Made with discarded banana peel, rum, Frangelico, crème de cacao, Galliano Ristretto and cream, the cocktail is silky, indulgent, and nicely balanced with roasty and sweet notes.
Malay Heritage
- Kelapa Old Fashioned - A play on the classic Old Fashioned cocktail, the flavours in this variation of the drink are bold, featuring a hint of tropical richness and delicate bittersweet nuances for the perfect balance of creaminess and nuttiness.
- Night Flower - Though it shares the same name with a city in Indonesia, Bandung (rose-syrup drink), has become uniquely rooted in Singapore and Malaysia. A contemporary twist on the beloved local drink, this rum-based cocktail layers the subtle rosy creaminess of rose syrup with a refreshing hint of mint.
- Echoes of Batik - Akin to a classic Gin Fizz, Echoes of Batik is shaken to perfection with the right balance of tartness and sweetness, crowned with an edible rice paper printed in batik, a final flourish that ties its name to the artistry it honours.
- Serai Fizz – Inspired by Geylang Serai, one Singapore’s oldest Malay settlements, this is a refreshing highball with bright lemongrass notes and warming ginger lifted by effervescent soda for the perfect finish.
Indian Heritage
- People’s Market - Tekka Wet Market, nestled in the vibrant enclave of Little India, has been a cultural and commercial hub since its establishment in 1915. Just as the market overflows with colourful spices, fruit, and fresh produce, the cocktail concoction’s flavours are enlivened by The Glenlivet 12-Year-Old Whisky, Luxardo Apricot Brandy, jackfruit, honey and fresh lemon, which together bring tropical freshness, bright and zesty notes, and a balanced sweetness.
- Masala Manhattan - Masala lies at the heart of Indian cuisine, elevating every dish with its intricate layers of flavour, aroma and texture. This modern reinterpretation of the classic Manhattan is a carefully curated expression of regional heritage transforming everyday ingredients into a sensory experience that celebrates India’s rich culinary landscape.
- Yellow Dress - A clarified milk punch with Bacardi Carta Blanca Rum, elderflower, passion fruit, coconut, cinnamon and whey, this cocktail brings about a sensory experience, drawing on the ritual of devotion observed on the first full moon of the Tamil month of Thai.
- Alapadma - The concoction is aromatic, evoking floral intensity and fragrance, with subtle notes that add character and intrigue, showcasing the vibrant, expressive energy of the classical South Indian dance form, Bharatanatyam.
Other
- Royalty Scone - This cocktail captures the elegance of the British afternoon tea ritual and, like a curated afternoon tea set, combines a buttery richness with a scone fat-washed gin reminiscent of fresh pastries, beautifully complemented by aromatic elements that echo fragrant teas.
- Mistletoe - Sip on the flavours of Christmas with this tipple that delivers warm aromatic clove and cinnamon notes, as well as a hint of crisp pine, for a delightful concoction that is festive and comforting.
- Secret Garden - Drawing inspiration from Majolica tiles, treasured by Chinese and Peranakan communities as symbols of wealth, fortune, and refined taste, this cocktail delights the senses with its aromatic floral notes and playful, funky undertones. A baby Japanese peach lends a unique touch with gentle sweetness, leaving a memorable finish with every sip.
- Pioneer’s Elixir - Built on a base of blended malt whisky, cognac, and port wine, this drink embodies the city’s enduring legacy, with a bitter edge that represents the challenges and determination of modern Singapore.
Adding a unique artistic touch, the entire menu is hand-inked by the Hotel’s in-house artist Terrence Huang, making each copy a work of art in its own right. Guests are invited not only to savour the drinks, but to also experience the visual narrative reflecting the same craft, artistry and reverence for detail that defines the cocktails.
Zero-Proof Cocktails
In addition to the boozy selections, the new menu also introduces an updated array of non-alcoholic drinks crafted for a refreshing experience where flavour takes centre stage. Guests can explore a world of well-balanced beverages, offering all the taste without the buzz.
To accompany the libations, a fresh selection of bar snacks offers bold, inventive flavours, providing a delightful counterpoint that complements the new cocktail collection.
