Executive Chef Bilal Wshah brings back a Mediterranean-inspired brunch to Seasons every Sunday this winter at Four Seasons Hotel Washington, DC. Seasons’ iconic Sunday Brunch beckons guests to explore the flavours of the Mediterranean, in addition to the classics that have turned the long-standing brunch into an icon in DC.

Inspired from his native Jordan, Chef Wshah has created a menu with all of his favourites: hummus, falafel (his own mother’s recipe), kabsa rice, baba ghanoush, shakshuka and grilled rack of lamb in addition to our Seasons Brunch favourites.

Leading the kitchens at Four Seasons Hotel Washington, DC, for several years now, Chef Wshah is excited to serve a brunch menu that is near and dear to his heart. “I got my start in the kitchens of the Four Seasons in Amman, Jordan, my hometown,” says Wshah. “Sharing some of my favourite dishes from home with our Seasons guests and teaching my team how to make them bring me so much joy.”

In addition to the opulent food stations, Executive Pastry Chef Ashish Thalakkat proposes Mediterranean delicacies such as kunafa and warbat as new additions to the famous Pastry Room, an entire room filled with all varieties of cakes, petits fours and sweets.  

Above and beyond the Mediterranean specialties, a made-to-order Chef’s station features omelets and pancakes. The seafood station delivers delicacies such as ceviche, prawns, oysters and grilled sea bass. Countless salads as well as cheese and charcuterie platters make for a Sunday Brunch to remember.

“We are proud to bring our Mediterranean Seasons Sunday Brunch back to the Georgetown community,” says Hotel Manager Igor Morosowski. “Our team loves connecting with the guests and creating special moments to mark the occasion. You could say it is a part of our character.”

Brunch is served from 11:00 am to 2:00 pm every Sunday. Price is USD 130 per person with an optional USD 30 bottomless Mimosa. Guests 6 to 18 years old are USD 60 per person and children 5 and under are complimentary.
