The Cove at Four Seasons Hotel Westlake Village Debuts Mediterranean-Inspired Dinner Experience

The Cove Pool, Kitchen & Bar at Four Seasons Hotel Westlake Village officially debuts its highly anticipated Mediterranean-inspired dinner menu, available Wednesday through Sunday this summer from 5:00 to 8:00 pm, with bar service continuing until 9:00 pm.

This next chapter of The Cove’s evolution introduces an elevated coastal dining experience at sunset, curated by Executive Chef Hugo Bolaños. Served in a relaxed yet refined open-air setting at the foothills of the Santa Monica Mountains, the new dinner offering is designed to extend guest’s days at the pool, as well as welcome local diners, to experience one of California’s largest and most luxurious poolside venues, spanning more than two acres (nearly a hectare).

Drawing inspiration from sea, sand, sky, and mountains, the new menu showcases vibrant seasonal ingredients, artful presentations, and globally inspired fare. “Every dish on this menu tells a story,” says Chef Hugo. “We’re bringing together the bright, sun-drenched flavours of the Mediterranean with the rich farming and fishing traditions of our California coast. It’s a true celebration of our region’s bounty.”

Signature dishes on the new dinner menu include a local Seafood Tower, Trio Crudo, Caviar Limone Linguini, 35-Day Dry Aged Bone-In Steak and Whole Roasted Cauliflower. Dessert will feature tantalizing offerings such as an Olive Oil Greek Chocolate Cake and Tiramisu Bomboloni.

Dinner reservations are now available via OpenTable to both hotel and local guests, while access to the pool facilities remains exclusive to hotel guests and those with spa appointments. Guests will also enjoy live music on Friday and Saturday evenings from 5:00 to 8:00 pm, creating the perfect backdrop for sunset dining this summer.
