Imelda Ng is Beverage Manager at One-Ninety Bar at Four Seasons Hotel Singapore. A dynamic hospitality professional, Imelda, more fondly known as “Mel Mel,” brings with her extensive international experience and a natural flair for creating meaningful, memorable guest experiences. “Hospitality chose me,” she reflects, a sentiment that has guided her career from the very beginning.

Originally trained in fashion design with a diploma from Design First Hong Kong, Imelda has always possessed a strong creative eye. This artistic foundation formed her approach behind the bar, where she treats cocktail-making as a form of design, balancing flavour, texture and presentation with the same precision and imagination once applied to fashion. Her ability to blend aesthetics with innovation allows her to create drinks that are not only delicious, but also visually captivating and memorable.

In 2018, she took on the role of Assistant Bar Manager at Caprice Bar at Four Seasons Hotel Hong Kong, marking a defining chapter in her career. Working alongside esteemed industry veteran Lorenzo Antinori, she played a key role in the success of the award-winning, three-Michelin-star restaurant, contributing to its impressive rankings on Asia’s 50 Best Bars with #34 in 2020 and an outstanding #10 in 2021.

Her career has also spanned global brand ambassadorships with Diplomático Rum and Canaïma Gin, during which she was based in Shanghai and participated in guest shifts and events across Asia and beyond.

In 2023, she returned to Hong Kong to join Plaza Premium Group as Bar & Beverage Manager of Intervals, the first-of-its-kind cocktail bar at Hong Kong International Airport, where she oversaw beverage operations across four lounges and their flagship bar. Subsequently, in 2024, she showcased her skills on the Viu TV reality show Master Mixologist, competing against more than 30 bartenders from Hong Kong. That same year, she proudly represented both Intervals and the Hong Kong Bartenders Association at the International Bartenders Association (IBA) World Cocktail Championship in Portugal, where she won the Best Cocktail Design award for her creation Holiday Mood, and placed ninth overall among champions from 61 countries.

Beyond her accolades behind the bar, Imelda is admired for her creativity and community spirit. A painter, cook, and charity advocate, she spearheaded the Meow Mo dumplings project during the pandemic, handmaking and delivering more than 10,000 dumplings to support out-of-work bartenders and charities across Hong Kong.

At Four Seasons Hotel Singapore, Imelda leads the beverage program with her signature creativity, meticulous attention to detail, and warm, engaging hospitality. Guests can look forward to inspired new cocktail menus and beverage experiences that blend global influences with local flair, each thoughtfully designed to surprise and delight.
