Inspired by his grandfather, a former pastry chef in Paris, Ethan Diamant’s culinary journey began in Lincoln, Nebraska. He discovered his passion for cooking at the age of 16 and pursued formal training at The Culinary Institute of America in Hyde Park, New York.
Following his education, Ethan refined his skills at Gramercy Tavern in New York City before joining the Frasca Hospitality Group in 2020. During his time at Frasca, he advanced into the role of Sous Chef in 2023 and was part of the culinary team during two Michelin one-star reviews. In 2024, Ethan joined Four Seasons Resort and Residences Vail as the opening Chef de Cuisine of Tavernetta Vail, where he continues to lead the kitchen with a focus on craftsmanship, seasonality and regional Italian cuisine.
