Heart of The Camp: The Flavorful Storytellers at Four Seasons Tented Camp Golden Triangle

Where flavour carries stories of people, place and tradition

At the Camp, food is more than a dining experience. It reflects the land, the people, and the traditions that make the Golden Triangle unique. Behind each flavour are people who carry these stories forward, sharing a little of where they come from with every guest.

Khun Kat: The Storyteller of Taste

For more than a decade, Katharin Kuntien, known to guests as Khun Kat, has been one of the Camp’s most memorable hosts, guiding guests through Northern Thailand not with maps or itineraries, but through flavour.

Part sommelier, part cultural ambassador, and part intuitive host, Khun Kat has a natural way of making food feel deeply personal. Raised in Northern Thailand, Khun Kat grew up in a world where food was never simply functional.

“It was always how we showed care,” she says. “How we welcomed people, how families stayed connected.”

For Khun Kat, hospitality was a language learned at home. Food carried emotions, memories, and a sense of belonging. When she entered the world of food and beverage, she discovered a way to share not only her knowledge, but something of her own story and the place she calls home.

Today, this philosophy comes alive through one of the Camp’s signature experiences: a wine-and-cheese tasting that feels less like a formal pairing and more like a story waiting to unfold.

The experience features locally produced ingredients, including wines made from Thai-grown grapes, a detail that often surprises guests who associate wine primarily with traditional wine-producing regions.

For Khun Kat, this moment becomes an invitation to look beyond expectations and discover the richness of Thailand’s own landscape.

Each glass is introduced with context: history, geography, craftsmanship, and often a personal memory. The wine becomes more than a tasting note; it becomes another way to discover the place. One ingredient, in particular, holds a special place in her heart: Makhwaen, the aromatic Northern Thai spice known for its citrusy, peppery complexity.

“It carries the scent and taste of my childhood,” Khun Kat says. “Sharing it with guests feels like sharing a piece of where I grew up.”

Over the years, what was once a lively group experience has evolved into something more intimate.

Private tastings now allow Khun Kat to create moments tailored entirely to each guest. She notices the smallest details: how someone reacts to the first sip, whether curiosity appears in their expression, or when a quiet moment of enjoyment says more than words. Often, before a guest asks, their preferred glass has already been discreetly refilled. It is this quiet attentiveness that has become Khun Kat’s signature.

“I think it comes from being fully present,” she explains. “And genuinely caring.”

After more than ten years at the Camp, what continues to inspire her?

“It’s the pride of sharing where I come from. Every guest is a new story, and every day is a new chance to be an ambassador for my home. Being able to create a meaningful memory for someone, even in a small way, is what keeps me inspired to do this work every single day,” she says with a smile.

For Khun Kat, flavour is a way to open a conversation and share the memories of her home. For Chef Ning, it begins with the land itself, transforming seasonal ingredients and local traditions into dishes that tell the story of the Golden Triangle.

Chef Ning: Inspired by the Seasons

For Camp Chef Sirintip “Ning” Sianglert, cooking begins with an understanding of the land, the people who cultivate it and the traditions that have shaped the flavours of the Golden Triangle.

As Four Seasons Tented Camp Golden Triangle celebrates its 20th anniversary, Chef Ning’s cuisine reflects the spirit of a region where cultures, landscapes, and culinary traditions converge.

Her menus draw inspiration from the heritage of Northern Thailand while embracing influences from neighbouring Laos and Myanmar, creating dishes with a distinctive sense of place. Growing up in Northern Thailand, Chef Ning developed an appreciation for the rhythm of the seasons and the abundance they bring.

Today, this philosophy guides her approach to cooking at the Camp, where menus evolve throughout the year according to what local farms, villages, and community producers have to offer.

“Nature tells us what to cook,” she says. “When we follow the seasons, we not only create fresher and more flavourful dishes, but we also honour the people and traditions behind every ingredient.”

From fragrant herbs gathered nearby to produce sourced from neighbouring farms, the ingredients connect each dish to the people and landscape around the Camp. By working closely with local growers and artisans, Chef Ning keeps these relationships at the heart of her cooking while supporting the communities that contribute to the region’s culinary traditions.

“Each dish carries the fingerprints of the land and its people,” she shares. “From the aromatic herbs and fresh produce to the flavours that tell the story of the Golden Triangle.”

Stories That Stay with You

Through Khun Kat’s stories and Chef Ning’s creations, food becomes more than a moment at the table. It becomes another way to experience the Golden Triangle – through its people, traditions, ingredients and landscape.

Khun Kat and Chef Ning represent just two of the many people who bring the Camp to life each day. One shares memories through flavour; the other allows the seasons and the land to guide what arrives at the table. Both offer guests something deeply personal: a glimpse into the place they call home.

Their stories are part of a larger one shared by the people of Four Seasons Tented Camp Golden Triangle – each offering guests a different way to understand, experience and connect with this remarkable corner of Northern Thailand.
