Under the culinary leadership of Executive Chef Giovanni Speciale, the culinary team’s focus on fresh ingredients and freshly prepared dishes creates a rejuvenating dining experience in One‐Ninety Wood‐Fired Steaks and Seafood Restaurant at Four Seasons Hotel Singapore.

With a starter as unassuming as the buffalo burrata with varieties of tomatoes, taggiasche olives and Tuscany first press unfiltered olive oil, diners can savour a burst of regional flavours from Chef Speciale’s home country – centred round five ingredients from five different regions in Italy:

  • Buffalo burrata - originates from Apulia
  • Tomato datterini ‐ originates from Sicily
  • Tomato camone ‐ originates from Sardinia
  • Taggiasche olives ‐ originate from Liguria
  • Unfiltered olive oil ‐ originates from Tuscany

Part of the mezze lunch spread, the starter paves the way to a lavish appetizer selection comprising of organic salads, prime cured meats, delicately prepared pâté, Asian appetizers and fresh seafood.
