Introducing Brasserie Palmier: An Approachable Riverfront French Brasserie Offering Lighter Preparations, Fish and Seafood at Four Seasons Hotel Bangkok

Lush tropical foliage, shaded riverfront patios, fresh oysters and a crisp bottle of wine; it is easy to picture oneself at a neighbourhood French brasserie. Housed next to one of Bangkok’s oldest seafood markets at Four Seasons Hotel Bangkok at Chao Phraya River, Brasserie Palmier emphasises fish and seafood with lighter preparations to suit the tropical weather of Bangkok, while still retaining the classics.

When the French first arrived in Thailand, their dining habits and dishes evolved due to the tropical climate. Fish and seafood took a larger focus, sauces became lighter, and tropical ingredients were incorporated. Head Chef of Brasserie Palmier Nicolas Raynal wants to highlight this refreshing side of French cuisine.

“The menu is very approachable, featuring a robust oyster selection, signature seafood towers, beautiful fish dishes, tartare variations and salads, while also offering all-time favourites,” says Raynal. “Whether trying something new or sticking to the classics, it’s perfect for a casual quality dining experience.”

A live oyster and wine bar take centre stage at the restaurant, allowing diners to choose from a variety of fresh oysters and an approachable selection of French wines. The menu includes numerous sharing-style dishes, including signature seafood towers, daily le plat du jour, and of course savoury and sweet palmiers, served in an environment ideal for sociable dining.

“Many of our dishes include an element of tableside preparation,” says Raynal. “Our kitchen and service team engage regularly with diners, creating a fun and lively ambiance that invites you to linger. The chic tropical French setting is relaxed and welcoming to all, whether inside with a glass of wine and a few oysters at the bar, or a three-course meal outside on our riverfront patio watching the Chao Phraya roll by.”

On weekends, Brasserie Palmier will offer a la carte breakfast from 8:30 am to 12:00 noon. “Our breakfast menu features the classics you would expect at a local café in France, from fresh baked pastries and breads, to crepes and croque monsieur,” adds Restaurant Manager Nicolas Gonthier. “Mornings along the riverfront are just flawless. Grab a coffee with some friends, and have a leisurely breakfast gazing out over the river – that’s what I call a picture-perfect start to the weekend.”

Designed by AvroKo, Brasserie Palmier draws inspiration from the French tropics. Lush tropical greenery and potted plants blend seamlessly with hints of colonial design and layered modernism, evoking an inviting atmosphere.
