Grand-Hôtel du Cap-Ferrat, A Four Seasons Hotel Presents “It’s Tea O’clock,” a Sweets-Only Revisited Afternoon Tea Created by the Hotel’s Award-Winning Pastry Chef Florent Margaillan

The Pastry Chef of Grand-Hôtel du Cap-Ferrat, A Four Seasons Hotel has revisited the traditional afternoon tea and now presents a sweet tea time featuring seasonal pastries, to be enjoyed every afternoon starting in the elegant Eiffel Rotonde.

At just 30 years old, Florent Margaillan boasts an impressive career with work experiences among hotels such as the Ritz and Four Seasons Hotel George V in Paris, L’Apogée in Courchevel, and more recently, the Royal Mansour Hotel in Marrakech alongside Michelin-starred Chef Yannick Alleno, until he joined the Grand-Hôtel last June.

For this fall season, Florent has revisited the traditional afternoon tea, an historical ritual instated at the Grand-Hôtel by illustrious past guests such as Jean Cocteau and Coco Chanel, who enjoyed gathering in the Hotel’s Rotonde for tea time in the 1950s.

Renamed “Tea O’Clock”, this new afternoon tea is served on an elegant home-made sugar tray and features individual pastries as well as a cake to be shared in a convivial spirit atmosphere. Florent drew his inspiration from seasonal products such as hazelnuts, clementine and blackcurrant to create a delicate variation of tastes, including shortbread cake garnished with melting cream and homemade Piémont hazelnut praline; chestnut cream and blackcurrant creamy heart tartlet; crispy chocolate and pecan nut treats; pistachio and clementine leaf; and quince and redcurrant puff pastry are among the delights featured, to enjoy with family or friends.

While relaxing in the elegant Hotel Rotonde designed by Gustave Eiffel overlooking the Aleppo pine trees and the Mediterranean Sea, guests can enjoy this delicious sweet break paired with a hot chocolate, a cup of tea from Betjeman & Barton, or a glass of Deutz Champagne.
