Introducing Organic Chocolate Afternoon Tea at Four Seasons Resort Chiang Mai

Four Seasons Resort Chiang Mai celebrates winter in Northern Thailand with a decadent afternoon tea menu featuring the very best of organic chocolate from Thailand along with premium chocolate from Switzerland and France. “The chocolate from Thailand is sourced locally in Chiang Mai within close proximity to the Resort,” shares Pastry Chef Yanisa Wiagnon who has curated the special afternoon delight.

Sustainable Dining

Working with local farmers, Yanisa ensures that only the best chocolate is used in the menu. “One of the highlights is Cocoa Doi made by a hilltribe community that is very careful to ensure sustainable practices in their farms,” she says, adding that their crop is chemical-free.

Health Benefits Galore 

“We wanted to present a menu that is not just low-impact on the Earth, but also supports a healthy lifestyle,” shares Yanisa. Packed with vitamins and minerals, cocoa nibs are recognised as superfood world-over for their health benefits. Good quality chocolate is also high in antioxidants and is believed to help alleviate stress, lower blood pressure and improve brain functions. “Have a bite of chocolate to brighten up your mood instantly!” smiles Yanisa.

A Chocolatey Affair

The menu is a blend of innovative dishes as well as classics that make an afternoon tea truly memorable. Guests can expect white chocolate peach verrines, caramelia salted chocolate banana choux, Jivara matcha mandarin layers with 40 percent Jivara milk chocolate, bon bons made from single origin 75 percent dark chocolate, chocolate scones with clotted cream, and more. The savoury cocoa bagels and cocoa "croffle" ham and cheese made with organic raw cocoa powder are not-to-be-missed. “The strawberry lime jelly and Valrhona Strawberry Inspirations is my pick,” smiles Yanisa.

Overlooking the verdant rice paddies, the experience the afternoon tea at the deck of North by Four Seasons is highlighted by the farmer’s parade that takes place at 5:00 pm every evening, signalling the end of another day of work for the team at the rice paddies. “We invite guests to enjoy the beautiful afternoon in the outdoors,” says Yanisa, “What better way to unwind than with a delicious chocolatey menu overlooking the lush tropical landscape?”
