Experience an Authentic Latin American Asado, A Pop-Up Culinary Event at Four Seasons Resort Costa Rica at Peninsula Papagayo

In partnership with Chef Dante Ferrero and local wagyu farm Finca La Josefina, the Resort will host the culinary event at Nemare steakhouse

Four Seasons Resort Costa Rica will host its first Latin American Asado, a live-fire grilling structure with Argentinian origins where various cuts are slowly roasted for several hours creating delicious flavours and aromas. Hosted on the Nemare steakhouse lawn, the event will be held on Saturday, June 4, 2022 at 6:00 pm.

“The Latin American asado is a joyous gathering where friends and family share and celebrate,” says Chef Emiliano Rabia. “This culinary event brings to life the pura vida spirit and we are excited to partner with one of the pioneers of asado while also supporting local communities.”

Known for his grilling techniques, Chef Dante Ferrero created an unforgettable gastronomic experience with the self-designed grilling structures that can be up to six-feet (1.8 metres) high. Based in Mexico City since 2001, the Argentinian chef has mastered the art of open-fire grilling and is the owner of Dante. Brasa y Fuego restaurant, Mexico City in the Polanco district. Chef Dante has collaborated with Four Seasons in the past, creating an asado culinary happening at Four Seasons Hotel Mexico City along with Executive Chef Emiliano Rabia, now the Executive Chef at Four Seasons Costa Rica.

Along with Chef Dante, the Resort is also partnering with local third-generation cattle farm Finca La Josefina as the exclusive beef provider. Finca La Josefina is the only wagyu cattle farm in the Guanacaste region and one of two in all of Costa Rica with a grass-fed black wagyu heard. Nemare Sous Chef Enrique “Kike” Retana brings his love and passion for Costa Rica and the region of Guanacaste to the mix.

Guests will gather in the Nemare lawn where the first-of-its-kind culinary event will commence with welcome drinks. Six dedicated grilling structures will be featuring a variety of cuts of meats including short ribs, skirt steak, whole ribeye, grilled mahi mahi, shrimp skewers, Costa Rican chorizo, whole roasted chicken, as well as an assortment of grilled vegetables. The asado will also include Nemare sampler sauces such as chimichurri and assorted side dishes made with local ingredients such as pejibaye and quinoa salad, as well as desserts including banana and pineapple fosters.
