Calling all culinarians: hot on the heels of its recent win at the inaugural Food & Wine Hotel Awards 2017, Four Seasons Resort The Nam Hai, Hoi An is giving a Michelin-starred boost to its summertime menus with a visit from Swiss culinary legend Chef Heinz Witschi.

For three days this July, guests will have the opportunity to meet and mingle with Chef Heinz, as well as sample his gastronomic delights via a trilogy of tasting options: a bespoke Cooking Academy session (July 5, 2017); creative canapés at the complimentary Management Cocktail evening (July 6, 2017); and a specially curated five-course set menu at Cafe Nam Hai (July 7, 2017).  

With over five decades in the industry, Heinz Witschi is culinary elite.  A forward-thinking, creative seafood specialist, he spent many of his formative years travelling the world – 16 countries across four continents – before returning home and opening his first restaurant in Zurich in 1974, which earned him his first Michelin star. In 1986, he opened Witschi’s Restaurant & Bar, which was awarded one Michelin star before being named Gault-Millau Chef of the Year in 1993 – accolades that kickstarted nearly two and a half decades of TV appearances, cookbooks, culinary classes and invitations to cook at leading international restaurants and events, including Prince Philip’s 70th birthday at Windsor Castle, UK.

The menus that Chef Heinz has prepared for Four Seasons Resort The Nam Hai are no less impressive. Cooking Academy highlights include: scallops with ginger and olive oil, butter sautéed stingray fillets with bouillabaisse coulis and cappuccino crème brulee.  Cocktail canapés range from eggplant caviar with quail breast to lang co oysters with chicken gelee and sturgeon mousse with beetroot.  And finally, the set menu wows with fresh red snapper soufflé with watercress foam and poached lobster and champagne sabayon.

Dining at Four Seasons Resort The Nam Hai is a fine balance of traditional and modern flair – complemented by open kitchens, world-class chefs, a professional-grade Cooking Academy, and herb and vegetable farm featuring 35 seasonal varieties nurtured by a team of 10 full-time gardeners. Across the Resort, the menus and settings have been designed to warm the heart and ignite the senses: oriental fusion at Cafe Nam Hai; inspired local flavours at Lá Sen; chilled-chic tasting plates at the Beach Bar; and romantic beach barbecues on a private stretch of sand.

Exclusive Cooking Academy places are limited to 8 guests at USD 110 per person. The splendid five-course set meal at Cafe Nam Hai is priced at USD 105 per person. Prices are subject to 10 percent tax and 5.5 percent service charge.
