Four Seasons Resort Hualalai Launches Hawaiian Kanpachi Farming and Culinary Experience

Sustainable epicurean experience in partnership with the country’s only open-ocean fish farm

Four Seasons Resort Hualalai introduces a Hawaiian kanpachi sustainable fish farming and culinary experience.  Exclusively available to guests of the Resort, this experience takes guests on a private tour of the country’s only open-ocean fish farm. In partnership with Blue Ocean Mariculture, the sole producers of Hawaiian kanpachi, guests will be guided through the full life cycle of the native fish, culminating with a custom dinner highlighting the richly flavourful fish.

“We are excited to offer this sustainable and unique culinary tour for our guests,” states Colin Clark, General Manager of Four Seasons Resort Hualalai. “Our guests are increasingly interested in where their food is from, and Blue Ocean Mariculture’s Hawaiian kanpachi operation is a unique way to be immersed in the island’s food culture.”

Guests will start with a private tour of Blue Ocean Mariculture’s hatchery, located just a few miles from the Resort. Here, they will be led through the state-of-the-art facility by a marine biologist while learning about the life of kanpachi from spawning through juvenile growth.  After returning to the Resort, the Resort’s Ribcraft boat will take guests to the open-ocean pens where they witness the feeding of the fish from the water. On the way back to the Resort, guests will have the opportunity to snorkel with Hawaiian marine life including spinner dolphins, tropical fish, and honu (Hawaiian sea turtles).  Finally, a Four Seasons chef prepares a customised five-course dinner for the guests featuring the kanpachi prepared in various ways with wine pairings.

The Hawaiian kanpachi experience is available to guests of the Resort and can be booked through the concierge with 72 hour notice. The package costs USD 7,800 for up to six people. To book, call 808 325 8000.
