Seafood Sunday at Ritz Bar: Four Seasons Hotel Lisbon Casts Its Second Sunday Dining Net

The tides are changing: there’s a new "big fish" in Lisbon’s Sunday dining scene, cast from the same net as the city’s ever-popular Varanda Sunday Brunch.

From Sunday, June 23, 2019, Four Seasons Hotel Ritz Lisbon is offering diners an Atlantic-fresh alternative to its lavish Sunday Brunch dining concept with the introduction of Seafood Sunday at Ritz Bar: an easy-breezy way to savour delicious seafood delicacies, lounge in relaxed surroundings, sip Champagne and immerse in the buzzing ambience of one of the city’s chicest spots.

“Our Executive Chef Pascal Meynard has built a reputation on his creative craftsmanship in the kitchen, and now he’s redefining the city’s Sunday offerings too,” explains Joachim Jacob, the Hotel's Food and Beverage Director. “Seafood Sunday is a new experience for Lisboans; a lavish yet laid-back affair filled with local ingredients, sustainably sourced from the surrounding Atlantic, where the cool waters are perfectly suited to all sorts of marine life – in particular, cold-water lobster."

"Consider it the sofa-based, seafood-stacked equivalent of Varanda’s existing offering and you’ll be on the right lines,” Joachim adds in his distinctively French accent.

Seafood Sunday guests can choose from two sumptuous seafood platters, an à la carte menu, or a decadent seafood spread at the bar, where chefs will prepare the seafood en-place before serving at the table. All options can be perfectly paired with crisp, cold bubbles and enjoyed, sofa-style, around the bar’s low-level tables, or al-fresco on the terrace.

Platter highlights worth donning the prerequisite seafood bibs for include: lobster from Peniche or Algarve; razor clams from Setubal; carabineiros from the Algarve; oysters from Sesimbra, Aveiro and Algarve; and percebes from Peniche or Costa Vicentina. You can almost hear the sound of the Atlantic’s waves crashing into the rocks and feel the fresh sea air.

The à la carte menu is a flamboyant showcase of Portuguese favourites that demands equal attention: ameijoas à bulhão pato, a seafood staple complemented with olive oil, plenty of garlic, white wine, cilantro and zesty lemon; octopus salad with tomato and coriander; and classic lobster bisque, often overlooked yet sensational when prepared by knowing hands. And of course, there’s the Algarve’s cataplana, a rich southern speciality cooked in a traditional copper vessel to lock in the flavours of prawns, littleneck clams and chouriço, served in true Ritz Bar style with Chef Pascal’s secret sauce.

Having travelled from Michelin-starred Parisian restaurants to the remote wilderness of Canada in pursuit of perfecting his art, Executive Chef Pascal Meynard’s experimental menus draw influence from every corner of the globe – and Seafood Sunday will be no exception. “Growing up in the Basque region of France I was never far from the water,” he comments. “So to have this opportunity to dedicate a whole menu to one of my favourite types of food feels like a culinary homecoming.”
