Jonathan Chapuy, Executive Pastry Chef of Four Seasons Megève Collection hotels, draws his inspiration from his sweet childhood memories to reinterpret the letter to Santa Claus in a gourmet way.

A lover of nature and wide open spaces, Jonathan Chapuy finds inspiration in these elements for his creations with a distinct style and identity. Crowned vice-champion of France for dessert in 2018, the chef creates pastries that are as gourmet as they are creative, characterized by their low sugar content and extreme precision of taste.

For the holiday season, Jonathan Chapuy immerses guests in one’s memories shaded with sweet scents for a deliciously regressive pleasure. "To allow oneself to dream, to write to Santa Claus one's dearest wishes and greedy desires - it is in this spirit that I have created this log. Like an ode to the flavours of our childhood, this gourmet dessert offers a harmonious marriage of textures and flavours," explains Jonathan Chapuy.

The secret of this log's smoothness lies in the whipped cream version of sweet clover, a local aromatic plant with natural flavours of hay and Tonka bean, delicately coated with a chocolate cookie with a childlike fervour. At its heart, a gourmet caramel subtly balances this sweet marriage of flavours.

The pleasure continues with a creamy dark chocolate mousse from Venezuela 65% from the chocolate roaster Nicolas Berger, which sublimates the roll and reveals a perfect balance.

This bouquet of flavours is intensified by a delicate sobacha praline and buckwheat flakes crunch that awakens all the senses.

A real immersion in childhood memories, "Letter to Santa Claus" offers a moment of gourmet sharing to celebrate the magic of the end-of-year holidays.
