Bingsu, the iconic Korean dessert of shaved ice with a range of toppings, gets a tasty twist this summer at Four Seasons Hotel Seoul with the launch of the new ‘Tutti Fruit-ti’ menu – a fragrant celebration of local seasonal fruits.

From 01 May to 30 September 2021, the Hotel’s laidback lounge space, Maru, plays host to the creative brilliance of Executive Pastry Chef Alexandre Chersouly and his pastry team with four special rotating bingsu, each revealing the month’s finest ‘tutti fruit-ti’ treats, alongside three main bingsu – perennial favourite Jeju Apple Mango; Very Berry, and Maru Bingsu.

Reflecting the homely feel of current times, the promotion is also all about staying local – showing off the range of diverse fruits available across South Korea, from grapefruits to mangos, peaches to Muscat grapes – highlighting the bounty of different provinces such as Jeju Island and Cheongsong.

“Beautiful, refreshing, and packed with melt-in-the-mouth flavour – what’s not to love about bingsu?” comments Alexandre Cherchously, Executive Pastry Chef at Four Seasons Hotel Seoul. “Here at the Hotel, it’s a privilege to share our pastry team’s talent alongside the culinary scope of a national favourite and our region’s natural abundance.”

Tutti Fruitti’s seasonal menu includes:

May – Citrus Pavlova Bingsu: a fragrant composition of lemon cream, panna cotta, grapefruit sorbet and fresh meringue.

June – Apple Tatin Bingsu: a celebration of the French dessert realised with vanilla ice cream, caramel pudding and sauce, streusel, and whipped cream.

July – Grapes and Champagne Bingsu: the finest Chimes Muscat grapes alongside Champagne jelly, panna cotta yuzu, whipped cream and yuzu sorbet.

August – Peach Melba Bingsu: a tantalizing concoction of vanilla ice cream, peach jelly, raspberry sauce, poached peaches and caramelized almonds.

With Maru open daily from 11am to 10pm (subject to physical distancing guidelines), guests can enjoy a refreshing bingsu throughout the day and explore the country’s rich fruity abundance without even leaving the Hotel. Prices start from KRW 52,000.
