On Wednesday, September 30, 2020 guests are invited to enjoy By the Books, an exclusive event at Café Boulud at Four Seasons Hotel Toronto. This collaboration dinner will feature a four-course menu by Café Boulud’s Chef de Cuisine Nicholas Trosien and guest chef Michael Hunter of Toronto-based restaurant Antler.

The one-time dining experience features foraged and seasonal fare drawing on recipe inspiration from two cookbooks, Chef Daniel Boulud’s trusted French cuisine resource DANIEL, and Chef Michael Hunter’s new cookbook The Hunter Chef, a collection of recipes celebrating wild ingredients. Each course is guided by seasonal foods and the distinct artistry of two of Toronto’s top culinary talents. To further enhance the flavours, expertly crafted cocktails courtesy of Wild Turkey Bourbon will be carefully crafted to pair with each course.

“We are thrilled to have Chef Michael Hunter bring his expertise and love of the great outdoors to Café Boulud,” says Chef de Cuisine Nicholas Trosien. “Our team has always been committed to partnering with local talent, and celebrating seasonality and culinary creativity, By the Books is a perfect example of this. It’s been incredibly exciting to develop this menu with Chef Hunter, guests can expect a memorable meal that pays tribute to the flavours and ingredients of Canada.”

This will be the second intimate dining event hosted at Café Boulud since it reopened its doors in August.

“I’m so excited to be cooking alongside Chef Nicholas and the Café Boulud team. Fall also happens to be my favourite season for Ontario harvest vegetables and game,” says Chef Michael Hunter. “Certain dishes on the menu are inspired by my new cookbook, which will be exclusively available to guests as a pre-release, before it’s officially available on October 6.”

The comfort and safety of each guest remain the top priority of the Hotel and the restaurant. Upon arrival, patrons will adhere to a temperature check, which is part of Four Seasons Lead With Care health and safety program. Grounded in healthcare expertise and enabled by access to leading technologies and tools, the Lead With Care initiative is focused on delivering the utmost care, confidence and comfort to all guests, residents and employees.
