Inspired by the 1,200-piece collection of contemporary local art throughout Four Seasons Hotel Denver, designers of EDGE Restaurant and Bar have brought wine out of the cellar and into the action with a Wine Gallery. Displaying up to 730 bottles, it’s a visual and sensory tour of important West Coast wine regions including Washington, Oregon and California, as well as unique bottles from traditional regions in South America, Europe and Australia. The innovative “business pour” allows guests to complement lunch responsibly, with more than 50 selections to choose from in a modest 3 ounce glass, or by the carafe or bottle. At dinner, the sommelier can recommend flights matched to menu choices, including special homegrown wines created by local vintners, such as Two Rivers Cabernet, the limited-production 100 Monkeys, and IV from Canyon Wind Cellars. In a city often associated with one of America’s major breweries, EDGE is also showcasing local brews, including Lucky U Indian Pale Ale from Breckenridge Brewery, and 1554 by New Belgium Brewery. And of course the art of the cocktail is not forgotten, with locally distilled and blended spirits, including 360’ Double Chocolate Vodka and Leopold’s Rocky Mountain Blackberry Whiskey.
