Named after the state bird of Washington, the American goldfinch, the downtown restaurant Goldfinch Tavern serves sophisticated Pacific Northwest cuisine, simply prepared using the finest ingredients from the region.

Four Seasons Hotel Seattle has partnered with Ethan Stowell Restaurants to create a menu highlighting authentic Pacific Northwest ingredients: a seafood tower with crudo, shellfish and crab legs, an excellent burger, a special menu section of fancy steaks, plus a selection of classic appetisers among modern Pacific Northwest dishes.

The wine list is Northwest focused, with a wide variety of Old World Wines. Beers are all locally crafted in the Seattle area. Juices are fresh pressed daily and garnishes are prepared with each order. Dark spirits are an integral part of the offerings, with a specific focus on whiskeys. The menu features a section dedicated to classics, while the House Cocktails section takes local spirits and incorporates them into original concoctions.

The design of the new space is a play on water and boats, the foundation of Seattle’s ship building history. The design is Scandinavian Modern to honour the heritage of the original settlers of Seattle and the ship building industry with its focus on beautiful and sculptural woodworking that they brought with them.

Wood from ships inspired the architectural elements and the patterns created throughout the restaurant. Furniture and fabrics are inspired by the reflection of the Seattle skyline on the water. Colour tones of ambers, charcoals and blues blend together to mimic the city’s reflection off the water.

A balance of contemporary furnishings and organic materials invites guests to meet, dine and socialise in a relaxed atmosphere - a perfect fit along the waterfront.

Guests are immediately welcomed by the custom seating centerpiece, located at the new restaurant entry in the lobby, integrating the Hotel with the restaurant.

The dramatic interior boasts views of Elliott Bay, the Seattle Great Wheel and the Olympic Mountains from expansive windows, and the whole scene is anchored by a centre bar with textural tile and rich stone surfaces. In the mornings, the bar is energised with a barista station, while evening brings about a transformation with a focus on a raw seafood bar. Shades of blue mingle with amber and charcoal, much like colours of the sunset over Elliott Bay. Dark oak wood brings warmth to the space and scenic views provide the ideal backdrop for a great meal.

Design elements throughout:

  • Custom blown glass by Seattle-based Julie Conway, Illuminata Art Glass Design
  • Ceramic tile, with a metallic finish glaze at the bar and fireplace
  • Quartzite (super hard stone) on top of the bar
  • Thick felt layered up to create “planks” to absorb some sound between the banquettes
  • Steel pipes with a copper paint finish surround the bar
  • Leather and suede chairs

Several seating types:

  • Banquettes by the windows and against the walls
  • High leather bucket stools at the bar
  • Low tables and chairs by the fireplace
