From Los Cabos to Hawaii Island: Four Seasons Resort Hualalai and Four Seasons Resort Los Cabos at Costa Palmas Partner for a Special Culinary Pop-Up Experience
Four Seasons Resort Hualalai, the first and only AAA Five-Diamond and Forbes Five Star Resort on Hawaii Island, and Four Seasons Resort Los Cabos at Costa Palmas announce a partnership to offer a special culinary pop-up experience celebrating the distinct flavours of Baja California and Hawaii. Offered June 26 - July 15, 2023 at Four Seasons Hualalai, the menu is a collaboration between Hualalai’s Executive Chef Richard Polhemus and Los Cabos’ Chef Maritza Cortes, complemented by a Casamigos tequila-based menu of cocktails and flights developed by Los Cabos’ in-house Agave Master Ricardo Robles and Casamigos VP of Cocktails Kristin Clark.
Located at the Surf Shack, a beachfront locale with pristine views of the sparkling Pacific Ocean, the menu features a collection of savoury starters, fresh ceviches, and an innovative selection of tacos, pairing Hawaiian staples with traditional Baja Mexican delicacies. Highlights include the Catch of the Day Tostada, featuring avocado, habanero mayo and orange oil; the Pineapple Aguachile, including shrimp, cucumber, red onion and roasted avocado; and the Soft Shell Crab Taco, featuring spicy mayo, cabbage mix and lime on a handmade corn tortilla.
“We couldn’t imagine a more enjoyable way to kick off the summer travel season than to develop a menu showcasing this inventive fusion of flavours with the team at Four Seasons Resort Los Cabos at Costa Palmas on the East Cape,” says Chef Richard Polhemus. “Dominated by seafood, the cuisine in Baja Mexico pairs beautifully with the diverse blend of flavours that forms modern day Hawaiian fare, steeped in celebrating the rich bounty from the waters of the Pacific. We’re honoured to welcome Chef Maritza and Ricardo to bring a taste of Baja to Hawaii Island for this one-of-a-kind pop-up.”
Chef Maritza has been part of the Four Seasons family for nearly five years, having worked with the team in Mexico City, and most recently on the opening team of Four Seasons Resort and Residences Los Cabos at Costa Palmas where she serves as a Chef for the Baja-brasserie Casa de Brasa; the cevicheria El Puesto; and the guest-favourite food truck, the 19th Hole. In-house Agave Master Ricardo Robles provides guests with deep dives into tequila and its smoky progenitor mezcal, among other agave spirits. Akin to Hualalai, Four Seasons Resort Los Cabos prioritizes sustainability and locally sourced food in its restaurants, with many of the ingredients coming from the farm and orchard located on-site.
“Both Hawaii and Mexico have delicious, fresh flavours woven into every dish, and I am excited to share the dishes Chef Richard and I have created through blending our cultures’ rich history of food. The tequila and mezcal pairings by my colleague Ricardo Robles will complement each dish, enhancing the flavours and ingredients present throughout our menu,” says Chef Maritza.
This pop-up builds on the already impressive culinary program at Four Seasons Resort Hualalai, joining the Resort’s unparalleled dining experiences and commitment to incorporating local, seasonal ingredients, through its partnerships with the many farmers on Hawaii Island as well as the flourishing Hualalai garden program. Each restaurant emphasizes sustainable practices, sourcing 75 percent of all food served from Hawaii Island.
