Crafting cocktails comes with creativity, art and passion. Hailing from the picturesque rice paddy fields of Tabanan in Bali, I Made Dwiki Prayoga brings a punchy combination of these ingredients that have knocked his career to new highs. With the Gulf of Thailand giving him new inspiration, this dapper bar manager of CoCoRum at Four Seasons Resort Koh Samui believes that the happy hours have truly begun, “Koh Samui is rich in culture, and gives you the truest sense of Thailand’s island life.”
Dwiki’s bartending journey began at the Cocoon Beach Club in Bali. As he continued with the pre-opening of the Canggu Club, his career continued to stir up opportunities, as he embarked on a three-year journey, mixing cocktails behind the busiest bar in Bali - Sundara Beach Restaurant at Four Seasons Resort Bali at Jimbaran Bay. His success wafted through the air as he moved to Four Seasons Landaa Giraavaru in the Maldives, where Dwiki whipped up signature cocktails at the Blu Bar, in partnership with Proof and Co. It was time to trade his flip flops for shoes and add a dash of glitz as Four Seasons Resort Dubai at Jumeirah Beach came calling. On a roll for three years, being in charge of several bars as head bartender, it is his strong work ethic that brought him accolades - from the Hendricks Bar bagging the "Best Cigar Lounge" in UAE, to the Sea Fu Restaurant and Bar on the radar of the Michelin Guide for several years.
Dwiki attributes his success in bartending to three factors - creativity, passion and knowledge. It is the simple syrup of honesty that defines his true spirit, making him fun, and his concoctions genuine. "Mixing beverages is a craft that helps to elevate the 'spirit,'" he smiles. Titled a “certified anesthesiologist” by Javier de Las Muelas for the best Dry Martini, Dwiki never tires of mixing cocktails, “especially a Negroni!”
Did hospitality come to him naturally? “I do come from a family of hoteliers,” he grins. When Dwiki isn’t creating magic behind the bar, his heart lies in social work. “I am passionate about charities that help people with special needs and hope to start one of my own some day,” he says.
