Chef Junious shares his Southern culinary heritage at the Chef Table Series.

In the Southern United States, food isn’t just about ingredients and technique – it’s also deeply intertwined with family and tradition. Weekends and special occasions see the entire clan gathered around the table, sharing hearty dishes, stories and laughter. Each family has its own secret recipes, guarded closely and passed down to the next generation. This rich culinary heritage laid the foundation for Executive Chef Junious Dickerson’s professional journey.

“I would see the priceless satisfaction in my grandmother’s eyes when everyone was sitting together, enjoying the food she had made for us with her own hands… That’s where my love of cooking began. I wanted to be a chef to bring people together and create those special moments for them—it’s the most rewarding feeling in the world,” says Chef Junious.

Born in Virginia, USA, Chef Junious grew up surrounded by the flavours of soul food, a home-style cuisine with its roots in the African-American community. Now, he pays homage to his delicious childhood memories with a Southern Heritage menu, available at the Chef Table Series at Four Seasons Hotel Kuala Lumpur.

During this uniquely interactive experience, guests can get up close and personal with the culinary team, who will guide them through the fascinating dishes, paired with authentic American whiskies. “The menu reflects my journey as a young chef through the Deep South,” explains Chef Junious. “I’ve taken a number of classics and reinvented them. The soul remains the same, but with fresh touches in taste, texture and presentation.”

Sample creative interpretations of Southern staples, such as Carolinian She-Crab Soup, The Dirty South, and Fried Chicken & Waffle. Diners can experience this one-of-a-kind culinary adventure in the intimate ambience of the Private Dining Room at Curate.
